    For future reference, Worcestershire is a type of fish sauce blend so you can always use that to replace the unami in a recipe that calls for fish sauce 😊

    In a world with so much going on all the time, so many complicated issues, and things we couldn’t even have considered to happen a few years back, its so refreshing to see a childlike excitement and enjoyment for simple things like your food processor chopping jalapeños or watching you enjoy trying out new recipes. And, your audio sounds great with the mic!!

    I have been canning for the first times!!! I canned pickled beets last year to test the waters. This year I’ve canned pasta sauce, wine jelly, apple raspberry jelly, and a huge amount of apple pie filling!! So far so good!! I get my produce from a local farmer. Got the half bushel of apples from an orchard up the road from me.

    It is good to wear the gloves to prevent accidently burning yourself, but also to help preventing burning someone. I just heard someone else stress the importance of this, especially when taking care of young children, which is something that had never occurred to me. Good job Becky!

    Hi Becky. If you look at your ingredients for the hot sauce you'll see that all of the items are canning safe. To can it you would process it based on the item that would process the longest. This would not be considered rebel canning because all of the ingredients are canable.

    When you harvest your carrots, press down on the carrot root first. It then pulls up easier. Another reason for smaller jars is that, once opened, the produce starts to lose quality. if you have it packed in jars of just the right size, you always use it at peak quality.

    My ex husband and I had a garden at our house. We grew a bumper crop of Habanero peppers. He was the heat monster ...not me! When he was processing the peppers I had to leave the house. I was choking so badly on the airborne pepper. I have occasional asthma and those peppers really had a bad effect on me!

    So glad to see you put the gloves on! Years ago, when habaneros were just making their way into popular culture, my mother and I did a canning project without knowing the exact heat levels. I had a test that night for statistics and my professor sent me home as soon as I finished it because of the redness of my hands. Found out that soaking the hands in milk helps cut the pain...

    Several years ago, I embarrassed myself at a Mexican restaurant while eating some "mild" salsa (I don't tolerate the hot stuff). As I was gulping down my water, which wasn't helping things, my sweet waiter calmly handed me a glass of iced tea. I gulped it down and was able to breathe and talk again. He explained that the tannins in the tea interacted with the capsaicin to help neutralize it. I've never looked that up, but it worked! I didn't even care that the tea was unsweetened 😂

    Becky, you are very adventurous. I never double a recipe, canning or other until I know that I like the way it turns out. I'm with you on smaller jars. I use pints and half-pints almost exclusively (I'm canning for just myself). When Baby Acre gets bigger you will probably use quart jars again.

    As someone who is allergic to pepper and has asthma, I can't tell you how appreciative I feel of your comment on air quality while you were making these recipes. It was also nice for you to express that your husband probably would touch one of the recipes, but your brother would love it. It just acknowledged the differences in people. I think that is just one of the things that makes you great at what you do. Love your videos.

    Becky, it probably doesn’t make or break this recipe, but liquid measuring is traditionally done in liquid measuring cups not the dry measure flat top ones. The measurements are slightly different for the two. Mostly the liquid measure gives you an accurate amount when you get the cup up to eye level to see the liquid at the correct line - and it’s much easier to not spill it!! I love your channel and this hot sauce recipe looks sooo great I’m going to have to try it. I don’t eat sugar though, so I’m wondering whether it would suffer terribly without the brown sugar. Maybe with stevia instead?

    I have that attachment. The dicing is so wonderful for homemade salsa. I dice potatoes and dehydrate them in cubes for hashbrown. Wonderful recipes you shared today. Thank you Becky.

    Hi Becky! I feel like we are friends at this point😊. I grew a red jalapeño because I was dying to see one and it was SUPER HOT. I read that the color doesn’t affect the heat level but I’m not sure because it felt so much hotter than green ones. I’m trying to wait for the rest of my green jalapeños to turn red. I love the taste but WHEW! Thank you for being my internet friend and such an inspiration to try new things and stay positive and true to yourself.

    Hey Becky! Great video, as usual. I have the same kitchenaid attachment. Just wait until you use it for bulk chopping onions. GAME CHANGER! It is obviously not worth it for one or two onions, but when you have a big cooking day or you need to chop a lot, it is very helpful. Also the softer the food the lower the speed and the harder the food the higher you want the speed to be. I want to like it for tomatoes, but for me they come out mushy rather than diced (but I was having problems with my lower gears on my mixer, which I have recently replaced), that has just been my experience, you may feel differently. I also love to use it for celery, potatoes, and occasionally carrots (I get a little paranoid because they are so hard)

    Tomorrow my family and my neighbours (best friends) get the keys to our allotment. For years i've grown in my backyard and in pots. We'll be getting a 338m2 garden including a wooden shed/gardenhouse, a small greenhouse, established asparagusbed, rubarb, blue, black and red berries , appletree, appletree with cookingapples and peartree!🎉🎉 Thanks for all your inspiration.     I diced my cowboy candy when I saw your first video on cowboy candy! Easier to put on a cream cheese cracker! Yummy The Freezer roasted tomato salsa I’ll be doing every year! I’ll be growing tons of tomatoes every year, doing more raised beds! It’s the way to go! Love roasting my Salsa Verde also! It’s a big hit in the homestead!! Got my Vita-mix immersion blender like the one you got HEAVY EQUIPMENT LOL!

    Chelsea from Little Mountain Ranch discussed in one of her last videos you can actually use your pressure canner as a steam canner for high acid products too. I know you were considering buying a steam canner but might be something to look into :) Always love watching your videos, they always have so much inspiration!

    That cowboy candy brine is the PRIMARY INGREDIENT in my cornbread. 2 box mix, 1 can cream style corn, those jalapeños and enough of that brine to make it pourable. Even spice haters love that cornbread.

My husband is really intrigued about the carrot one. We like heat but we also want our sauces to have flavor. So I’ll probably make that one first.

    Yes! Do wear gloves! I wore gloves when I was cutting up my jalapeños and habaneros. Forgot I had banana pepper to cut up. Didn’t wear gloves. Oh my gosh! For 12 hours my hands burned. Like the skin physically felt like it was on fire. I actually filled a couple gloves with milk, put them on and elastics over them at my wrists..

    I love my Kitchen Aid food processor attachment. I use it to chop everything but garlic and the tomatoes in salsa, jalapenos to make cowboy candy relish (like you did in this video), the vegetables in pickle relish, banana peppers into rings to pickle...all the things! The plunger thing that lets you push food down has this nifty smaller tube to put peppers in to hold them upright to cut consistent rings. It's my favorite attachment, I use the heck out of it every year!.

    Hi Becky ,loving your Chanel . I accidentally ran across it by accident . I'm doing the cream of mushroom etc. Today. I waterbath for 3 hours . This makes it shelf stable. I just wanted to say thank you for your awesome channel. God bless you 🙏🏻

    If you want to get a more complex flavor in your sriracha, leave the caps on the peppers (just trim the stem off with scissors). It brings the best fresh floral flavor.

    You will like the chopped jalapeños for the candy. I follow Rachel's recipe and it's delicious and works well in smaller pieces.
