I've ran across some tart dough recipes that tell you to grate s cooked egg yolk into the dough, would the yolk power work as a sub and provide the same results?

The egg yolk powder could work in the same way but only if they were re-hydrated and cooked first.The dry powder would not provide the same result.
@KItchen Alchemy from Modernist Pantry, is egg yolk powder and/or egg white powder suitable for use in homemade icecreams? And, if one or both are, specify which, and could you provide some recipes? Thanks so much.

If your recipe calls for egg yolk or white then yes you can use the powders. If your recipe calls for whole eggs then use whole egg powders. The egg powders do not change ice cream recipes since they have to be reconstituted back before adding to the recipe.
Great video! Question though: can I make scrambled egg whites out of the egg white powder? Thank you!

Yes, once reconstituted you can cook it as you would a fresh egg white.
Since you can make scrambled egg surely omelette as well

The same as regular eggs since they do have to rehydrated before adding to a recipe. There's no extra GF benefit.
Powdered eggs?! Seems kinda like a whisk-y endeavour...XD

@@Modernist_Pantry lack of seasoning before cooking? (and I get that's induction, but the glass surface and pan retain heat ... seemed a /really/ long time for eggs on heat, fwiw)

@@op3129 it's really just one of our first on camera demos, so we learn as we go along
if you are trying to express a temperature you can give a degree instead of comparing it to bath water. This presentation would be benefit from with a script.
Not helpful at all. You didn’t show the most important bit: how you get from the egg white miserable little quantity to the finished merengue in the quantity that you show. The no brainer one would expect to see us missing. Still don’t know what to do with dried egg white.
