Potatoes and eggs - Grandma's recipe - with Caroline Manzo and Lauren Manzo | Easy Italian recipe

Today's recipe is a simple one (but with many nuances): Potatoes and eggs. Caroline Manzo says it best: "You're taking something very simple and turning it into a million different things with very little effort." The recipe itself is easy - what you do with it after (adding your own flourishes like pancetta, bacon, etc) is up to you. It's a fantastic easy holiday recipe that can produce a legitimately delicious, warm meal in very little time.
POTATOES AND EGGS RECIPE
Potatoes (cubed)
Onions (chopped)
Salt
Pepper
Garlic powder
Olive oil
-Let it all get nice and soft
-Throw 2-3 scrambled eggs in and lower the heat. Constantly stir the eggs. Add cheese to the pan. ("The more cheese the better" -- Lauren uses American; your tastes may -- and can -- vary)
NOTE: You can put pancetta in here or bacon. Or anything of your choosing. Lauren's recipe does not.

    My father grew up in a very poor household in Cyprus, and this was their main meal on a regular basis since they couldn't afford meat. He brought the recipe with him when he married and had his children and now it is a family staple for his grandchildren as well. True comfort food, and a great way to dispose of some potatoes that need to be used up. Caroline - on a RHONJ episode, your son made a Chicken Limoncello recipe once, which I tried to replicate because it looked so good. It is now one of my go-to recipes for entertaining. I would love to know exactly how you all make it, to compare it to what I ended up with :) Keep up the great work!

    I am not sure if you have ever seen Clara on KZread.. she has passed but her videos are still up. She’s an Italian old lady that cooks foods her family cooked to get through the depression in New York. (Great Depression cooking) this is what these dishes remind me of.

    Mexican household here ❤ we make it too I usually cook chorizo with mine and we eat it on bolillo bread or tortilla (sometimes even put refried beans if I have any beans made)… these simple dishes are the best! I’m just loving your channel!

    I love potatoes and eggs. It's an Italian staple, especially during Lent! I make it slightly different. I will add parmesan cheese and sometimes mozzarella. Like you, I always make my potatoes crispy. Also, we always ate it on an Italian roll. Love your channel, Caroline!

    I haven't made this in ages! We had this so often as kids. Yum! My Mom would keep it unscrambled at the end, like a frittata she'd flip it out of the pan as one whole piece. This is the beauty of what you're doing on this channel Caroline. This recipe is part of our lives, but I've never seen it done like you've done it, just like my Ma's and my Nonna 's. It's given me such a warm feeling to remember eating this. Thanks so much for reminding me and for teaching it new to others. ❤

    Irish family here. We cream the potatoes with butter, add onion or scallions and mash. Then make it into a mound and out two fried eggs on top. Add salt and pepper. Just as delicious.

    Love potatoes and eggs - but hold the cheese! Great no meat on Fridays meal! My mom and grandmother would also make macaroni with eggs and cheese. They would make it with ditali. Cook the macaroni, leave a little of the pasta water, add beaten eggs with a handful of grated locatelli romano. Keep on a low flame until the eggs cook. Add black pepper and enjoy! Yum!

    Very similar recipe we are bicultural a great mix of Hispanic, and German and we made this all the time papa and egg, with crispy bacon on the side with white bread and ketchup yum . Love your family love Lauren

    We've always made potatoes and eggs. We're Mexican American and we make burritos and we add different things to it too like... crumbled sausage, green chile, cheese, chorizo, bacon, etc. Delicious!

    Caroline, I wanted to say I’m really liking and enjoying this series! It’s so nice to see you make classic Italian dishes that aren’t too complicated and walk through the steps. I do wish Lauren was a bit nicer to you and to the audience, though, if she continues to stay on the channel.     My German grandffather would make this, but added thinly (less that 1/4") sliced bacon and finely chopped scallions. My grandparents lived next to a church, and I swear I could smell it wafting into the church during "Our Father" and a few "blessed art thou's" on summer mornings. Thanks for reminding us about old family recipes, and "keeping it the way it was".... Love you guys!

    I must be Italian because I’ve been making potatoes and eggs since I was 12! I use real butter, sauté the onions and potatoes then add whisked eggs in! Mmm mmm mmm

    My Nanny and Mom made this dish. I think I’ll have to start making it again. It is so simple and so delicious! Your videos bring back memories to me. Thank you! My Mom, later in life, made her version of Giambotta. I know it was all vegetables including eggplant. She told me the ingredients but I never wrote them down. Do you have a version of giambotta?

    I absolutely love giambotta!! I make it with carrots, potatoes, onion, zucchini and tomatoes…it is so delicious, but I’ve seen other recipes where people add other vegetables so I think you can make it with what you love.

    Norma here. Whenever my son would sleep at Grandma’s house and she would ask him what he wanted for breakfast, he would ALWAYS say potatoes and eggs. My mom would be so happy that he loved her potatoes and eggs.

    Torta de patatas or torta española. I learned how to make this at 11 or 12. Of course no cheese, but onions. My gma was a kitchen ninja and I'm so fortunate she taught me much and I've passed it on the my kids.
