This week, let's bring Melaka to YOU! In this episode, I’ll be cooking one of Melaka's iconic grilled fish recipes, Portuguese Baked Fish, Malaysia settlement style. Its rich flavours will surely elevate the inherent sweetness of the fish and you must try it with a bowl of hot rice to get the full experience of it. - Shallots
- Birds eye chili / Thai chili
- Fresh turmeric
- Galangal
- Lemon grass
- Coriander's root
- Candlenut
- Dried chillies
- Fresh red chillies
- Shrimp paste
- Red Snapper (Fish)
- Torch ginger flower / Bunga Kantan
- Coriander
- Lime

You can leave whichever ingredient you’d like out except the fish!! 😆. I always say cooking is a very personal thing, make it and adjust it to your liking and that’s the best recipe it can be.

This really depends on the size of your fish. Usually about 20-30mins depending on size. Best way is to monitor and check from time to time. Happy cooking!!!
Could you please add the ingredient measurements. It is difficult to understand the measurement from the video.
