This is a fantastic Pork Chorizo recipe that can be applied to Beef as well. I show you how to make this from scratch and it can be made pasty, with a ton of flavor, or as a perfect Chorizo Sausage Link. I've included my Chili Sauce video recipe down below if you want a pasty chorizo and also my Italian Sausage recipe to show you an alternative way to wrap your sausage if you're not stuffing hog casings. My Boudin recipe is also a fantastic Cajun recipe that stuffs hog casings if you're interested in that as well.     It is important to add enough salt and hang the Chorizo in a cool dry place (not the refrigerator) for 10-14 days depending on how mature you like it. In my case 2-5 days hanging in the kitchen is enough. Remove bubbles from the chorizo to prevent bacterias. I liked that you did it using Kitchen Aid, normally I do eveything using my hands, I will try this next weekend. Thanks

    If you love to cook, I would highly recommend it. Add one piece at a time and before you know it... BOOM... you'll have a whole arsenal of kitchen supplies and equipment.

    That looks good! I rarely eat chorizo because the commercial stuff appears to be full of food color, but this I could go for!

    I've actually never seen food coloring used in Chorizo before and I've never seen it listed on a label in the ingredients of any brand I've looked at. But, I sure hope you give my recipe a try. I'm eating some now, actually. I made chili. :-)

    Brenda Green Even I scavenged all the components one piece at a time. My kitchen aid is second hand, the meat grinder is second hand. Only the horn attachment is new and my daughter bought it for $7 and gave it to me as a present.

    That's how your Chorizo is made. People have different recipes for everything. Pizza, Hamburgers, stir fry.... Lot's different recipes and different ingredients. 🙄
