Try the NEW AL Pastor Chorizo- • TACOS AL PASTOR EXPRES...
Chorizo tastes best when marinaded minimum of 24 hrs in the refrigerator
Ingredients
1 A pound of ground pork
1/4 cup guajillo chili powder
2 Tbs ancho chili powder (optional)
2 Tbs oil (canola)
1/4 cup apple cider vinegar (Tip below)
1 Tbs Mexican Oregano
1/2 Tbs garlic powder
1/2 Tbs onion powder
1/2 Tbs ground cumin
1 large bay leaf (ground)
1/8 tsp clove spice powder (if you don’t have 1/8 measurement- half of 1/4 tsp will work :)
1/4 tsp thyme
Black pepper to taste (Suggestion: 1/2 tsp)
Salt to taste (start with 1 tsp)

TIPS
*If chili pods are fresh and need to be dried- set your oven at 200 degrees (F)- time will vary with chili pods 3 minutes on each
*If you want it SPICY! Add 6 ground chiltepines or 2 ground chiles de Arbol. Cayenne pepper is also a great alternative amigos
*VINEGAR!!! If you like a strong tangy vinegar flavor use 1/2 cup vinegar. I suggest starting the recipe as is and a make it comfortable for your home next time you prepare chorizo. I’m available in the comments if you can’t quite pinpoint the flavor you desire. Not all chorizos are created equal and store brand chorizo is great and has been in the package some time allowing flavors to combine. Allow the flavors to combine in your refrigerator. I like the minimum of 48 hours of rest/ marinade time.

I grew up in Arizona, a 5th generation Arizonan. My family settled there before it was a state. I LOVE Chorizo. I've had some of the best Mexican food, growing up. Nothing ever happened quickly. Thanks for this video! I love chorizo, but I am allergic to soy. Most store-bought chorizo has soy flour and other soy stuff. I watched your video, bought a meat grinder attachment for my mixer 4 weeks ago, and so far, have made 6 pounds of chicken chorizo, and 2 pounds of pork chorizo. Your recipe is great, and I have tips for those making chorizo using your recipe. White vinegar tastes much more like the traditional chorizo to me and my family, apple cider vinegar has a sweeter back note when you cook it. If your chorizo tastes not quite like chorizo, add more vinegar and more garlic while you cook it (my chicken chorizo I have to add a half teaspoon per 4oz of chorizo). The vinegar makes the spices pop and reduces the 'dry' aftertaste of using so much chili powder. Thanks again for all of your videos and hard work. I have made 4 of your recipes and they are all amazing!
Muchas gracias for this recipe (and channel in general)! I lived in Dallas, TX for 5 years and got addicted to chorizo. Now I live in Ireland where only Spanish chorizo is available, which, though tasty, does not work on a taco. Made this last night and literally did a little happy dance.

I happen to stumble across their videos and fell in love. As Stephanie mentioned in her first few videos that we have the feature of fast forward or skipping if we want. She likes to show the whole process and how to fix any mistakes that may arise. I have already tried a few of their recipes and they turned out awesome. It isn’t quality from the store. It isnt ground pork like this quality recipe! So this is way better than eating chorizo from the store trust me don’t look at the ingredients on the store one 🤢

I found this from your 2021 first video of breakfast soup! I can not thank you enough! I could not find Mexican chorizo in Peru. I'm BEYOND happy. My boys just LOVE soup! Many. Blessings for the new year love you and my family love your recipes. Our chickens are organic and the egg yolks are like school bus orange lol because they eat marigold and calendula flowers like candy. I"m with you on the glass versus plastic. Every time a plastic container broke, I replaced it with glass. Now I have no plastic containers at all and feel so much better about storing food.

I love your videos. Our son is married to a Mexican lady and we love her and her family. They live in Corpus Christi, and we always love our visits there. We live in NW Texas and it’s about a 12 hour drive from here. They cook a lot like you, and that is a compliment. 💕
Fun fact to everyone in the comments, you can sub out the pork with ANY ground meat, turkey, even soy. Use the Beyond meat for a vegan option (use the egg replacer) The seasoning is absolutely delicious in every thing I've added to it to make "chorizo".

Here in Detroit, MI fresh chorizo is at least $4/lb. I just bought 1.67lbs of ground pork for .79 at my local grocery store. So here it’s definitely cheaper to make your own!

It's that I always got people telling me, there's no way ur in ur 60's......my parents have good gene's, my moms mom, my grandmother was 96 when God came for her, and she had beautiful skin, and so did my mom, and my dad! I don't drink, smoke cigarettes, and I try to b jolly, kind to people, and laugh a lot! And I eat healthy.....but I do love ice cream! Lol . Maryann Rodriguez Super gene’s from heaven a gift to your family from God. My grandma went home at 96 also and at her funeral the minister said if they were a Miss America for grandma’s she would win. I’m 58 but I look 66 lol 😆 some sweet people gets the good gene’s , then there’s people like me. I love life and I enjoy every day. I have 2 kids and 5 grand kids 8 to 16 I never smoked and I’ve exercised most all my life. Love your story I and know God’s love and peace is in your home. Oh thank you so much for sharing this recipe! I used to live in California and the Mexican Cuisine is the best ever! My Mexican friends taught me how to make chorizo and egg burrito wrapped in a homemade flour tortilla. I was hooked!! The chorizo was store-bought and it looks exactly like your recipe. I live in Hoboken NJ now and have not been able to find the type of pork chorizo with the same texture, color and flavor😫 no matter what store I was in. Thank you again! I can't wait to make it😋💖

I was just thinking today how I want to make homemade chorizo. Would ground turkey or chicken work in this recipe? I made the cucumber aqua Fresca yesterday and it’s delicious! Thank you for sharing your wonderful recipes! 🙏
