Pork Chops and Pizzas Cooked With Open Fire at Marta

Ойын-сауық

Welcome to Open Fire, where we explore the various ways different cultures cook over live fire, as our host Cara Nicoletti, a fourth-generation butcher, learns the craft, practice, and philosophy of each dish.
This episode features Chef Lena Ciardullo from New York's Marta as she grills and smokes a heritage pork chop, makes a grilled puntarelle salad with a smoked onion dressing, and wood-fires a three-mushroom pizza.

Have you even eaten meat grilled on a wood grill of this nature? Trust me, something about blackened char whether it be on proteins or vegetables when cooked over fire does NOT taste burnt. Char from a fire is far different than something that gets blackened in an oven or a cast iron pan. ....Trust me, I cook over a fire I have in my home pizza oven and its pretty much how they're cooking in the video, and it is SO much better than a stove and an electric oven.

The cook is so articulate about firing up the foods...terrific concept. Meat and fire hearkens back to early man...skillets, ovens a poor second. The only thing I carp about is precutting the meat for patrons. Parents cut the meat for toddlers...you've butchered it as a chop...why deny the eating of it? Hand them suitable cutlery (if necessary) and a durable napkin and let them enjoy the experience.
