Today we're tying a pork chop seasoning experiment testing the impact of adding different flavors to a wet brine. We know that brining pork chops does have an impact but what happens when we add sweet or spicy flavor profiles?

    Claussen pickle juice (with the garlic bits and all) is a good brine for chicken or pork chops.

    I (now) brine my chicken for 12-24 hrs. Might have to try and cook the spices - I just use salt/pepper & garlic - first then add the chicken once it is cooled down. See what difference comes out. Definitely gonna have to try pork now! Brilliant vid!

    Garlic. Add fresh minced garlic to the brine. No need to boil. And a few sprigs of rosemary.

    Nice video, I figured brown sugar would alter the change of the pork chop more than the spicy one because it dissolves and can penetrate the chop more during the brining process. Maybe brining the spicy one with cayenne pepper powder or hot sauce might change it more?

    As you were saying you were going extreme with the sugar, I was expecting a lot more sugar than what you added. 2 tablespoons is not a lot for adding sweetness, but does help a lot for browning. I typically dry brine then sprinkle sugar just before grilling. Most significant variable is the pork chop- best are rib pork chops. I do not like light colored loin chops (dry by their nature) . Unfortunately, some supermarkets call them all loin chops, or are just vague.

    Let her eat it while you eat some good meat beside her. When she asks you to try the fake meat take a bit and look like you are going to gag but smile like you are trying to be nice and say “yea for sure if I didn’t have meat and was starving I could eat that”
