Porchetta is a thing of beauty. This is my Porchetta, what dya think? I LOVE PORCHETTA, its an Italian roast pork dish. Porchcetta rocks

INGREDIENTS
Meat
Large belly and loin of a good quality, high welfare pig
Season with
Salt
Pepper
Fennel seed powder
Stuffing
100g diced dry apricots
350g chicken livers diced
500g pork mince
½ onion
2 sprigs of rosemary
2 sprigs of sage
8 sprigs of thyme
½ lemon zest
1 bread roll crust off soaked in milk
50 - 70 ml of sweet sherry
70g pine kernels
60g parmesan
Salsa Verde
Flat Leaf parsley
Garlic cloves
Lemon
Capers
Anchovy
Dijon mustard
RW vinegar
EVO Oil

Just brilliant. Keep it up! Would love to see something like a Cornish pasty or Jamaican patty. Street food you can put a lot of love into. Or curried goat (roti). Loving the kitchen, man.
That is an incredible looking porchetta! I love how intense but clean the flavours you added were. I would easily pay ten quid for a sandwich that size with that much meat!
Love the new kitchen! Esspecially since something this elaborated wouldn't be possible without it probably. The pochetta looked just too good! That sandwhich is at least 10 pounds! Cheers!

Made all! The salsa verde is insane. Left out the anchovies but substituted some Worcester sauce. Porchetta roasting tomorrow. It's resting over night. Left out the liver to be safe for guests. Can't wait.

Interesting to have watched one of the older videos. I don't agree with the recipe and not even with all processing steps, but it was nice to see a good old "we do this, buy this, process this in these steps and then serve it and it looks like this" video. That's what I subscribed for a while ago. :)

This looks awesome but as I live on my own now (although I have a very hungry daughter who stops with me every other weekend) it maybe be a little big?
