Hey man awesome content. I was a line cook at a diner for 5 years and ended up becoming the GM. I’ve since left that job and miss it all the time. You’re knife skills are next level bro!! If I could give you some advice I would say: Crack the two eggs with both hands on the bowl at the same time (this will cut your egg drop time in half) When dipping French toast put the slices in between your finger instead of one at a time, dip one half -> flip and dip the other half (kinda like French toast Wolverine claws) Organize your hash brown to a perfect rectangle and put the oil down first. Use your spatula as a template for the size of the hash brown (better consistency and cleaner looking hash brown) For burritos try to roll them while they are on the grill. Let the tortilla get hot on one side and place all the ingredients when you flip again. Start rolling and keep your knuckles high. When cutting the French toast, stack them all up and do one triangle cut For omelettes try to diagonal cut the cheese on the grill. It melts the cheese and looks a lot cleaner too See if your work would buy you low rise metal grates this will improve the bacon temp and if you throw the bacon on the grill for a little but it comes out perfect and crispy (prep bacon to 70% cooked) These are only a few tips I learned from a bunch of cooks. I know as cooks we hate change but being able to change, being more organized and having better quality control is what got me to my dream job. I’m now making big bucks doing less physical work and more mental work. I tell everyone that is in fast food, work hard and listen up everyone has something they can teach you. If you gain the best qualities from each person then you become the best employee. Much love man keep up the great work ❤️

@@dkguy12 smaller restaurants are easier to get in than let’s say fancy ones. Show up well dressed with a resume and ask to speak to the manager. Do this multiple times and try to ask to get an interview. Look up interview questions to prepare and just be yourself!

Great work brother. Been a long time for hotline for me. Was a dinner guy myself but always knew breakfast combined with lunch offerings had way more moving parts and required better sense of timing. Plus guests are more in a hurry for breakfast lunch. We wrapped burritos different. I tried your way and I was struggling bro!

it's obsessive compulsive disorder not organized, ocd has nothing to do with organization and most people with ocd are extremely disorganized if you have an obsession to put 3 green pepper chunks on the counter and then put them back every time you have to cook an egg that's ocd stop self diagnosing

Very western thing, very good. Def try it. It gives it an extra creamy taste to it while also adding healthy fats into your breakfast. I’d say it’s def a California thing, born and raised in socal you are weird if you don’t get avocado on basically everything 😂

Probably just something they like to do there or he likes. Some people like to use it to keep the item together. Theres probably not an overwhelming reason why.
