egg white 120g
sugar 112g
almond flour 140g
powdered sugar 125g
If you want small batch,
you can use smaller ingredients.

1. What is oven shower..??
- The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
Look at the subtitles in the videos, there is detailed temperature.
3. What is the baking mat's name..??
- This is called a teflon sheet.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors
You can get it on 'Amazon.com'

8. What ia your oven and type..?
- My ovens are UNOX 135 and convection type.
9. Where can I get the templetes..?
- I made all templetes myself and I am not
sharing now.. Sorry..! 🙏🏻🙏🏻
10. Do you left or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.
11. What kind of eggs do you use? fresh eggs or aged eggs?
- I usually use fresh eggs. But' It doesn't matter what kind of eggs you use.
12. Why do you cook in a double boiler?
This is called 'Swiss mering method'. You can
make more stable and strong meringue.

These are so cute! I can definitely see why they’re popular. On a side note, I had two questions that I haven’t gotten definitive answers from, and I was wondering if you could answer them. The first one is, can you add liquid extracts to the meringue to flavour it? I’ve heard plenty of people say no, as it messes up the ratios, but I also see plenty of people doing it and I’m pretty confused 😅. Or would it be better to flavour it with something “dry” like cocoa powder, matcha, etc. My second question is, what would the ratios be for matcha or chocolate shells? I want to try flavouring the shells, but I have no clue how much to add. Keep up the great work! I’ve had the most success with your recipes, and I love the cute and creative designs you make!

It’s better to not use any, but you could use liquid extracts. But try not to use to much. For dry, there are many recipes that include using it. I have made chocolate shells with coca powder and it worked. Just make sure to use a recipe.

The ratio for liquids are completely different depending on how strong your extract / powder is

If you add extra liquids you might have to compensate in other ways(ex. add powdered meringue), and if you used oil-based liquid extracts it could deflate the meringue more than you want. You're going to have to experiment to find the right balance. Way easier to use dry powders. If you do try liquid extracts, use a Swiss or Italian meringue recipe as those produce more stable macarons.

I don’t understand, how can the temperature reach till 120degree if the oven door is opened , given you set the temp to 120 degrees to cook?

I do like this: I turn on the oven at 120C, it takes around 5min to reach this temperature. Then I turn off the oven, and put my macarons inside with the open door and dry them for 2-3min (so, they are drying at around 120-100C while the oven is cooling a bit). After, I turn on the oven again and set 145C and close the door as Sugar Bean instructs. They come out great. Hope it helps.

That really is a good question. I don’t think we reuse those. Not quite sure about recycling.

What does oven shower mean in Europe we don’t have oven like urs:(

Oven shower is after baking and helps strengthen the shells. Atleast thats what I have figured out that it does. She also does oven drying which is before the baking and that helps a skin form on top before baking. Hope that helps .. But still Id suggest google "what is an oven shower for" just to be sure.

It's Sugar Bean's way of telling you to turn off the oven and leave the door open for 2 minutes when the baking is done, before taking the macs out.
