Pit Boss Smoked Pork Butt | Pulled Pork On The Pit Boss Austin XL | Texas Style

In today's video we going are going over how to smoke a delicious pork on the Pit Boss Austin XL, to make some pulled pork, Texas style!
We are seasoning this butt with the best rubs in Texas, and the best rubs in the business, SuckleBusters! Once we built up the crust we wanted on the pork butt thanks to our Pit Boss Austin XL, we wrapped in Pit Boss butcher paper, finished it off, and the end result was fantastic! Give this recipe a try, and let me know how it turned out for you in the comments!
**Cook timeline and instructions**
-Season pork butt with SPG, or rub of your choice.
-This pork butt was smoked at 275º on the cooker.
-After about 5 hours or so, the crust had set on the pork butt, and it had the color I wanted, so I wrapped. The Internal temp was 160-165º depending where I probed.
-At this point I wrapped the butt, and put it back on the smoker, still running at 275º.
-I checked for probe tenderness when my thermometer went off at 203º in the thickets part of the butt, this took about an additional 5 hours or so. My final internal temp when I pulled it off was 205º.
-After it came off the smoker, I let it rest for an hour, I usually do two hours, but wanted to get the video done while I had some daylight.

    I followed this process to a T on my second effort with my Austin XL. The results were magnificent. All of our group raved over how good this pulled pork was. Went with the 225 temp setting and Hog Waller rub. Wrapped it at 165 and pulled it at 204. Bone came out clean and it crumbled perfectly when we started shredding. Thanks for the video, brutha.

    Typically I use Pit Boss competition blend. But lately I have been using Bear Mountain Gourmet blend for a nice all around flavor. This pork butt was Pit Boss comp blend.

    No? If it’s set to 250, and reading 250, it’s 250. Outside temp doesn’t matter. I’m in Minnesota and have never had an issue

    I definitely recommend panning and covering with foil and using the separator. It’s the best way to do it in my opinion.

    So ìf I wanted to make this the day before a party would it dry out? What is the best way to store it and reheat it to avoid it drying out when reheated.

    It’s definitely good the next day. So what I do is rest it, pull it, de-fat the juice, and add it back in, then refrigerate. Then I just reheat in a turkey roaster at 250° until it’s warm. I keep a little apple juice around if it starts looks dry, but I’ve never had to add any in if I incorporate the leftover au jus. I have a more recent pork video on my channel showing this as well 🔥

    @@AshKickinBBQ Man.. I got that cutting board/tub.... did two whole chickens iwth it.. I'm a messy guy and this thing worked awesome! easy clean up and I used way less seasoning because I could get at all the overflow in the bottom of the tub! Love the show!

    Do you think it would be a problem if I wanted to put the season on the night before? I'm planning on doing one this weekend, but will need to wake up and put it on around 5 am. I'd like to have it prepped and ready to go so that all I will need to do is start the grill and throw it on.

    Yessir, 275° the whole time. Nowadays I’m team #300. And yeah I always open it to reset the bark like I do my briskets 🔥

    I have many times. I typically debone my pork butts for competitions to have them cook quicker. I just prefer the bone in ones for at home personally 🔥

    James Stewart 210° internal is for brisket. 203-206° is for pork. If you’re cooking at 275°-300° there is no reason you won’t hit that temp. Depending on what you wrapped with, if anything at all will determine time, and how big your pork butt is.

    One thing I'll note, and it's an extremely common mistake for any developing grill master, is that you will for a significant amount of time get stuck at around 175-190 and it'll sit at that temperature for an uncomfortable amount of time. This causes a lot of cooks to panic and start trying all kinds of things to get it to get up in temp. Don't do this as you'll ruin your cook. Just trust the process and it will eventually hit that 203°. Just keep your probe in, keep your lid closed, and let it cook Edit - this concept is called the "stall"

    You can adjust your P setting in order to get it to 275°. It’s going to depend on the climate in your area as to how much you have to adjust.

    Hey brother, it's been about a year or so since I've done a pork butt, and have been wanting to do another one, but my wife and I just bought and moved into our new house and unfortunately, I don't have shade for my Pitboss, and was wondering if I should set my temp lower since it will be in the sun or if setting it to 225-230 should still work?

    The sun won’t really effect your cooker temp, I’d run it as is normal

    Ray, thank you for the solid advice. I will do that in the future. I'm still learning this whole KZread thing so stick with me man! All these details are indeed explained in the video, but as far as this cook goes: -Season pork butt with SPG, or rub of your choice. -This pork butt was smoked at 275º on the cooker. -After about 5 hours or so, the crust had set on the pork butt, and it had the color I wanted, so I wrapped. The Internal temp was 160-165º depending where I probed. -At this point I wrapped the butt, and put it back on the smoker, still running at 275º. -I checked for probe tenderness when my thermometer went off at 203º in the thickets part of the butt, this took about an additional 5 hours or so. My final internal temp when I pulled it off was 205º. -After it came off the smoker, I let it rest for an hour, I usually do two hours, but wanted to get the video done while I had some daylight.     Nic Schilling thanks man, I appreciate it! Great question! So honestly, wrapping in foil will definitely speed up the cooking time! Which isn’t a bad thing at all! The butcher paper allows the butt to breathe, and therefore doesn’t ruin the bark. That being said, if you use foil, when it’s finished and you pull it off to let it rest, open up the foil and let the butt steam off for a bit. This will allow your bark to set again, then you can wrap it up and let it rest. You’ll also collect more juices using foil! I’ll have another video using foil coming soon, but if you have further questions, please feel free to reach out and I’ll do my best to answer for you! 🔥

    @@AshKickinBBQ I ended up using aluminum foil for the cook and I let the meat go longer than ever this time and finally understand the toothpick test. This pulled pork pulled SO easy and now I understand because in the past pulling was a workout. Family raved about the end product. It was a win. Thank you.

    Hey there, so if you’re new, I’d just cook it at 250° and get a feel for tenderness and all that. It’ll prolong your cook time for a bit, but less room for error. Typically I cook mine hot and fast at 300°, mainly because I’m impatient 🤣.

    No need to worry about your p setting typically unless you’re trying to dial in temps in acclimate weather, etc. I usually rock at factory P4.

    @@courtneyjeans6171 nope, you don’t need to mess with P settings to smoke. Just fire it up per the manual, switch it to your desired temp, and you’re ready to rock!

    So even after you wrapped kept temp at 275? The entire length of cook at 275 is that correct ? Also how big was that butt so i can judge my time . First timer butt smoker following your recipe. The one im doing is 10lbs . It needs to be ready to eat at 3pm on saturday so just trying to figure out when to start it . Thanks

    Correct, 275 the whole time. You can kick it up if you need to. It was about 9-10 pounds. I also have another video on here that 300 the whole time and cooks faster.

    Hi Carl, sorry for the delay. The money muscle is the best part of the pork butt. It's a tube shaped chunk of meat that sits opposite of the bone side. It has a lot of intramuscular fat that makes it tender, moist, and delicious when cooked properly. I hope this answers your question, and thanks for your support, and watching!

    So you did it at 275 the whole way through? I cooked the same type of cut at 225 for 5h, wrapped, then another 4hr and couldn’t even get past 170 internal temp 😡

    Yessir, 275° the whole way. It sounds like your temps may be off. I recommend checking with a secondary prove on the grate next to the meat

    At 225 you'll likely be looking at 14-16 hours. You would have gotten past 170 had you continued to cook it.
