Pit Boss Pellet Smoker/Grill Beef Jerky

Hey everyone! In this video I got inspired by T-ROY COOKS to make this recipe of his. Checkout his video and subscribe to his channel if you’re not already with the link below. I show how to make beef jerky on the Pit Boss Pellet smoker/grill. I left out the brine/marinade process which is mix all ingredients together cover the meat and zip-lock or vacuum seal in a bag and refrigerate for 24hrs flipping the bag over every 8hrs. I left mine for 18hrs which turned out amazing.
Ingredients you’ll need for this recipe to make this the way I did it here.
2lbs eye of round sliced to about 1/4 inch thick
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp seasoning salt
2 tsp black pepper
2 Tbsp brown sugar
1/4 cup water
1/4 cup soy sauce
1 cup Dr.Pepper

I did this but doubled the Dr. Pepper, added red pepper flakes and some cayenne to the brine. On the smoker I put on some fresh ground pepper. Came out very good. Next time I will try a little honey in it as well, maybe some pineapple juice to get a little tang.

Hi, so my lexington don't have a p4 setting etc.. just smoke and 200 degrees on up, where would I set it ? Thanks in advance

What knife is the one you used to cut into the jerky at the end?

When you're done, do you empty all the pellets or you just leave them in there and cover it?

Hey Paul! I don’t empty the hopper cause I use the same pellets most times. For the winter I just let it cool and push it back in the garage and in the summer when it’s in the backyard I just let it cool and then cover the whole grill till the next use. If you have one or are gonna get one I don’t recommend leaving it uncovered incase it rain. The rain could get in between the hopper and the cooking chamber cause the pellets to swell up in the auger. Thanks for your question
Going to try this I have the same Pellet Grill , But shouldn`t you leave the smoke stack on and screwed down . Good video

Hey Chuck! Thank you. The piece your talking about is just a rain cap. I had it on for a while but it doesn’t make a difference in my opinion as the chimney is only a new exhaust point replacing the holes in the back from the factory.
I have yet to do jerky but, I would do. I’ve like you did yours. Bigger pieces and directly on the grates. Good job. You must be from “ up north” with snow on the ground..

Hey John! The bigger pieces are great. You can leave them the way they are or slice them smaller after if people like it that way. I’m from Ontario Canada. We’ve already had a bit of snow fall this week lol

You’re a bit further north than me here in Sioux Falls, SD. 51 today, 30’s tomorrow and below freezing Tuesday and Wednesday. Pork roasts in the Pit Boss Copperhead this afternoon. Weber Smokey Mountain charcoal with applewood for turkey day.
I just bought a Pitt Boss Classic. It didn't come with a smoke stack like yours. Is that aftermarket? If so, did it decrease the smoke flavor? The folks at Pitt Boss said that that port wasn't meant for that but, for a future accessory like a 'cold smoker" attachment. Pitt Boss hasn't been too helpful when answering my questions. BTW, love your videos, thanks!

Hey Christopher! Thanks for the kind words. The smoke stack is a aftermarket add on I put. I just feel it completes the look of what I would picture in my head for a BBQ/Smoker. I find I get more smoke flavor now that the grill is well seasoned vs when I first got it. It has nothing to do with the smoke stack I would say. I’m not sure why Pit Boss told you it’s not meant for that cause the plate cover that’s on there comes right off and the smoke stack bolts right on, no modding needed as all bolt holes line up perfectly and the diameter of the opening is the exact same. After I added it I covered the exhaust holes that are on the backside of the grill with foil tape that is used for sealing ducts in the house. Hope this helps you out. Feel free to ask anything else you might want to know about the Pit Boss and I’ll answer to the best of my knowledge

Hey Bruce! There are no adjustments on the chimney, it’s just wide open which would be the same as the holes in the back as they were wide open with no adjustments either
Excellent video Paul. I'm doing jerky today. You mentioned that you dried off your jerky after taking it out of the marinade. Is that just personal preference or is there a reason to do it?

You do not need to do that. never did that worked out great all the time.

the more liquid on the meat during cook the more smoke it'll pick up.
Do you leave it on the smoke setting all the time? What p setting do you use?

Hello, I was just wondering if your temperature ever stayed consistent while you cooked the beef jerky? Also did the top temperature ever do anything?

Hey Mel! For this jerky I just left it on the default P4 setting. I’m still in the process of playing around with the P setting to get a better knowledge of how it works to help others with any questions they may have
Would cutting against the grain make it easier to chew?

Jerky made right is always cut with the grain.
Did you refrigerate after cooking or just leave it out?????

I left it in my oven off overnight and refrigerated it the next morning

I have not tried that, as it’s hard for me to get my hands on some moose meat. I would try it if I ever get some to work with.
