Pit Boss Pellet Smoker/Grill (Explaining The P Setting And Temps On Control Panel)

Hey everyone! In this video I explain the P setting and how it works. I also give a breakdown on the temps and ranges for cooking as well. If you unplug your grill from the power after every cook like I do this will reset the P setting back to the default setting of P4 every time you power it up again, and if you just leave it plugged in all the time after use, you will need to manually change the P setting if you want to change it as the grill holds a memory with consistent power. This grill can do it all from day to day burgers, hotdogs,chicken etc to long low and slow brisket, ribs, pulled pork, you can even cook pizza’s to pie’s on it.     Great video, I have had my pit boss for a few years now and I never know how the p-setting works to the level that you explained it. Good job on that. Down to earth for us know it all guys. I did not read the book, lol. Now I am looking for more smoke flavor without using my smoke tube. Great video and I clicked the button and now I am following.

    Hey James, I’m not gonna BS you, but you’re not gonna get the smoke flavor off the pellet grill like you do from a stick burner. You get a light smoke flavor on the meat. You could always add a smoke tube in the grill to get more smoke on the meat.

    so If I want to smoke something low and slow on P5 I should keep it on the smoke setting and just change the p setting? or should I put it to 225 and the p setting at 5

    Good run down Paul, I use P6 in every cook. I have found it to give a good smoke flavor on the food. The manual said p6 and p7 could possible not feed enough pellets and cause it to shut off. I have not had that experience. I clean my pit boss every 3rd cook also. So debris and ash don't cause issues. I only had one issue, which was after a 16 1/2 hour brisket cook. The pellet cup got choked up, but I didn't clean it like I should have. Lesson learned lol, good video brotha.

    Thanks Kirby, yeah lesson learned. Don’t worry I’ve done the same thing when I first got my grill. Now I clean out the fire pot every time first before a long cook. I don’t really adjust the P setting to often as I usually just leave at the P4 default setting, but that’s good advice about the P6 setting you use for anyone reading this comment. If the flame goes out on you with the P6 or P7 setting try using a lower setting like P5. I know this doesn’t apply for you Kirby as your grill doesn’t give you any issues with that setting.     Have a Question for you ! I had bought the Austin XL couple years back. And last year didn’t get to use mine . But I have done ribs an brisket those two I’ve got down .I’ve also done chicken an done a pork butt but the chicken the skin was hard like sand paper an pork butt just couldn’t get the center all way done. ! But my Question on the P setting say for brisket an ribs. Would I set the P setting to like 5 or 6 what range would you recommend for P setting for brisket and ribs. And would you put it on the smoke setting for like a hour then move the temperature up to like 225 / 250 and let it roll ? Plus on for chicken and pork butt what would you recommend the P setting be on as well ! I didn’t realize every time you turn it off the P setting goes to factory set. And say while the unit is running you can reset the P setting right as well ? Thank you kindly for any information you give have a great day !

    Great video. You don’t know how many times I’ve tried to explain the P setting to people. I have friends that buy pitboss grills and they call me and ask the same 3 questions. 1. How does the P setting work, 2. Why so many temperature swings, and 3. Why don’t I see smoke coming out all the time. It’s exhausting to keep answering the same questions🤦🏾‍♂️😊.

    Paul, im brand new with smoking and my pit boss, I smoked some boneless chicken thighs on the smoke setting for an hour and then turned it up to 350 to complete the cook, it took a few minutes to even decide to start heating up to 350 and then instead of heating to 350 it stayed up at 400 degrees on the screen? Is this normal? Let me know. Thank you

    Oh man thank you so much I really appreciate this. I thought my smoker was broken after two uses because it was dumping so many pellets and then it would get so hot with massive flames. So if I understood you correctly I should turn the p setting to 9 which means that it will drop less pellets right with a low setting of like 225? Because the last time it was set on p4 and 225 but it got so hot almost catching on fire and I did vacuum out all the ash beforehand.

    That’s not what I got from it lol! I like my smoker on p2 or p1 anything over that it just smokes way to much for me! You need to be careful with a pellet smoker they smoke to much and can ruin what your cooking

    Thanks for that p info. Was not very sure wichway was more or less smoke plus wasnt sure if p was also involved in settings other than smoke. I have a small tailgate style treager and i like it alot but over thanks giving bought my nephew a pitboss 700fb and broke it in with some ribs then some back stripps then a whole 20 pound turkey and ham. Im no expert but that grill had my family thinking i was a bbq guru haha. I love the sear option,the pellet dump,the xl pellet hopper and the top rack. All things i dont have on my little tregger. Keep the videos coming. Oh i used youre applejuice idea on the ribs👌

    Thank you Eladio, these 700 series grills have got room to cook on. That sounds like you gave the grill a good break in with all those good cooks. Glad to hear everything turned out great and your family loved it all. I don’t use my top rack much as I find it a bit of a pain to reach food on the bottom in the back. I think if there was a little more height on the grill overall and the top rack was set a bit higher it would work out better with these grills. Now between your Traeger and the new Pit Boss you got your nephew you can really see that paying more is really getting you less. Meaning the Traeger has a higher price tag for a smaller grill with less options vs the Pit Boss with a lower price tag and bigger grill with more options.

    @@paulsq_ that is absolutely correct. I paid 375dlls for my small treager on sale over a year ago and 335 for the pitboss couple weeks ago. The same treager i got was going for $455 when i bought the pitboss . Right now for same price of 455 i seen the pitboss Austin xl the huge smoker i would like for a party or some big gathering put a whole lamb in it right. Anyway good luck with youre channel.     On "Smoke" I can't change the P setting. It just indicates "P" and no number. And pressing the P Set button does nothing?

    Yes took me a while not smoking to know the lower the “p” setting the higher the temp and less smoke one day I just ran it from zero and clocked the temps as I changed every 30 minutes

    Could've avoided burning 2 slabs of ribs if the Pitboss instructions were as clear and concise as you are.. thank you for the video - I will burn meat no more with the accursed "P" setting. I cooked 2 pulled pork and the first was perfect, the second got cooked way too fast with not enough smoke, then the same happened to my ribs. Now I know... I was pizza oven cooking my low & slows.

    Great Video Paul ! I'm on the fence about which grill to get. My favorite BBQ is HEAVY smoked or to the point where it is bitter or almost bitter to the taste. Will this Pit Boss get me there? Thanks RG

    If you’re looking to get heavy smoke flavor off any pellet grill it’s not gonna happen. You could use a smoke tube in the pellet grill to get more smoke flavor but it probably still won’t be as much as you’re looking to get.

    What temp should it be at when on the smoke setting? I just bought a 500 model and the smoke setting is 350 or more.. The fan is going full speed and there is a big flame inside on the smoke setting. What do you think?

    Mine has the flew damper. I understand fire, air flow and controlling heat with vents but not sure how all this works with dial in temps, P settings etc. l cooked on mine tonight for first time and confusing. Im very comfortable with my traditional grill but feel intimidated a little bit here

    Hey Mark, don’t feel intimidated by your pellet grill. It’s very simple and easy to use. Just set it to the temp you’re looking to cook at and let the grill do the rest while you just spritz once and a while. Don’t be looking for that smoke flavor you’re used to with your other smokers before this one as you won’t get it. With a pellet grill you just get a lite smoke flavor

    I’d be using the temp settings for a pork butt as the temp will probably be too low on the smoke setting

    mine keeps shutting the flame off when I smoke for a long time what p setting is good for long over 6hrs smoke? I leave it on p4 all the time and only have had the austin xl for about a month and has shut off twice on over 6hr smokes

    I got a ? for you the smoke setting what temperature is that I need to smoke some sausage at 125 to 150 to get smoke on it before storing i dont thing the pit boss can do that 🤔

    I don’t think any of the P settings will get you that low of a temp. The only time I see my grill with low temps like that is in the winter months when it’s freezing outside.

    so when doing all this do u leave the top part OPen *(fire) or close it.. i never know if it stays open or not. (i think u call it the sear fire)

    You want to leave it closed while you’re smoking or gonna be cooking with an indirect heat. The sear zone is basically for searing your meat. It’s not exactly a big enough area to do a direct fire cook unless you’re cooking one good size steak or a couple small ones. Hope this helps you out

    There is no 275 setting on this grill, and to answer your question the P setting only works while on the smoke setting. Any other temp you choose for smoking/cooking is run on a timer and you’ll get the pellets fed into the fire pot according to the timing cycle for the selected temp.

    The instructions make it appear that, the first thing you do, is hit the P button, but THEN comes the hopper priming procedure. Which is first? I've never turned the grill on yet. Brand new.

    So do you leave the control unit in smoke mode the entire time you’re smoking? And move the knob to a temp setting for grilling not smoking ??

    You can leave it in the smoke setting the whole time depending on the temp you are getting and what you are smoking. For smoking you can go as high as 275 degrees, I know most Pit Boss grills don’t have a 275 setting, any higher then that you are now getting into grilling/BBQ temps. Hope this helps you out Aaron

    Hey Les, if you’re looking to smoke it for a few hours first I’d go with a P5 setting then turn up the temp to 225-250 for the remainder of the cook.

    So the P setting only works on the smoke setting correct? If you adjust the p setting on any other temp other than smoke it won’t put out more smoke?

    As far as I know, the P setting works only on the smoke setting William. That’s why the smoke setting is the only one that works off a timer not heat through the grills’ temp probe.

    So, lets say I want to do ribs at 300 for 3 hrs smoked. Will it still smoke set at 300 or does it only smoke when set on smoke? Thx

    It’ll still get some smoke on them at 300. You’re probably better to go with 250 cause if your grill is like mine 250 will actually be getting you more towards 275-280

    Hey Paul, do your temps swing/fluctuate drastically on your slow cooks? I just got a Pit Boss 820 and cooked on for the first time today (did the burn off yesterday). When set at 250*, the "Actual Temp" went all the way up 370* numerous times and dropped to a low of 205. 20-30* swings I can understand, but 100+ doesn't seem right. Any ideas?

    Hey Steve, I’m not sure what might have caused that to happen with the temps. I had an issue with temps on my grill once when I cooked a brisket that I have on video. Ever since that I haven’t noticed it again. Next longer cook I do on the Pit Boss I’ll hook up 3 maybe 4 grate probes just to see and show everyone what the inside of the grill is actually doing. 100+ degrees is not right to be off. If that keeps happening contact Pit Boss and maybe they’ll send you out a new control panel and probe as that might be the reason for it all.

    hi Paul where is the hottest part of the smoker? is it by the hopper or towards the catch bucket? thanks

    I can only say on my grill the hottest spot is the top left corner towards the back wall. Everyone’s grill might be different from mine, so you’ll have to play around with it to learn and see where your hot spots are. One of the best ways to do this is throw a bunch of Pillsbury biscuits all over the grill and you’ll see where they are cooking faster indicating hotter spots.

    @@paulsq_ thank you Paul i have the same smoker as you. i watched a hot and fast full brisket video and they say to put the point at the hottest part of the smoker.. i have done two flats so far low and slow with no luck dry as F lol

    Welcome to my world on the pellet grill. I can smoke one hell of a brisket on my Weber’s but can’t nail a brisket totally on the Pit Boss. Just cause you have the same grill as mine doesn’t mean it’s gonna run the exact way with the hot spots. It might be but it also might not be. So I’d check it out first just to see for yourself on your grill. This is why if you watch other bigger bbq guys then myself you’ll hear them say from time to time learn your grill

    I was doing a 15 hour boston butt smoke on this grill. I went through 4 hoppers full of pellets. Should I raise the P setting to save pellets? Or is that a normal amount for long smokes?

    @@roger-xh8ms 225 and the hopper is a little smaller than the one in this video. Since then I built a hopper extender. Hold about 30lbs of pellets now haha

    @@roger-xh8ms I've gotten better. I cook 2 (4.5lb) pork shoulder deboned for about 12-14 hours. I put a tray of apple cider vinegar and water in on the hottest side of the smoker. They come out great. If I out anything bigger than 4.5 pounders in there it gets too crowded and creates hot spots in the meat. Aka turns it into jerky lol

    A lot of recipes call for 275 degrees. How do I get that with a Pit Boss?

    If you have a Pit Boss with the control panel like mine you won’t get 275. If you just set it to 250 you should be good. I’ve learned over the years don’t try and get locked one a specific temp just aim for a range that’s close to what you want and learn from that. I typically aim for somewhere between 225 and 250. Hope this helps you

    Every setting on my PB 820 results in 350-380 degrees. I have to constantly open the lid to let out heat.

    Also I have my grill on right now , am trying to lower temperature from 350 to 200 and is taking quite some time but it’s getting there, let me know if this is normal and also I believe from my comment below when it was at 400 degrees I believe I accidentally hit the prime button as well so it was putting more pellets in the auger so I had it set for 350 but the prime button kept it at 400 because of the extra chips, idk man just looking for some advice cuz I wanna make sure there’s nothing wrong lol thanks

    Hey Joshua, anytime you adjust the temp on the grill it usually takes 20-30 minutes for the grill to adjust itself to the new temp setting. When you are lower the temp it’ll take a bit of time for it to come down unless it’s really cold outside in that case it should help the temp lower a bit faster. The good thing with pellet grills is when you want a lower temp just open the lid for a bit and the temp will drop faster as you’re now letting the heat out faster. It sounds like you figured out why you hit 400 earlier so just watch the grill and try not to hit the prime button as it will send more pellets increasing the temp.

    You can only control the smoke while on the smoke setting. Once you change to a set temp you have no control over smoke

    Here are a couple of tips that make assembly slightly easier kzread.infoUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . 1) One person can assemble, but if you have a buddy to help, it will make it go faster - especially steps 1-3 and 8 (the legs aren't heavy but can be difficult to hold while screwing things in). Step 8, 1st part will take some time unless you have two more hands OR are really lucky. 2) Use a socket wrench! 3) Step 7, 3rd part - the flame carry over tube has an open side, MAKE SURE THE OPEN SIDE IS FACING THE FRONT. If it's facing the back, the tube won't work. 4) Step 10, 3rd part - if you don't have small hands (I don't, they're gigantic) getting the nut on is really difficult (but not impossible). It took me about 4 hours to assemble, but I took a "union break" every 60-90 minutes and ate a quick lunch. Also, I'm really OCD so I took my time, looked at the instructions carefully, and cleaned up as I went.

    The "P" should have been an "S" for smoke level. . The higher the number, the more smoke you get. Lower number, means less smoke.

    Sorry John you have a hard time hearing me talk. I’ve been looking into get a mic for filming especially for when the grill is being used I’m hoping it helps out to hear me over the blower fan. You don’t really need to play with the P setting unless you would like to try and get more smoke flavor on the meat. The verticals don’t have a P setting you can adjust they just have a set smoke setting on them.

    This explanation is partially incorrect. Not only is the P setting used for more or less smoke (in Smoke mode), it serves the dual purpose of micro-adjusting your grill to ambient weather temps and DOES in fact carry over into all other temp settings. Here in FL, the P4 setting in Smoke will settle the grill temp above 200, even 225 with added humidity and in the sun. This is the exact same scenario, only exaggerated at other temps should the P setting NOT be adjusted. Again, here in FL with a P4 setting, dailing in 350 will get consistent temps of 375-400 due to the ambient weather. It has to be adjusted, IN Smoke mode, for a longer pause at 350 so the grill temp will settle accurately. This has been verified in consultation with PB representatives who admit the language of the manual is convoluted. I'd recommend you edit your video so as to not distribute inaccurate information and really frustrate a PB grill owner who cannot figure out why their grill is stuck at 275-300 when dialing in 350/P4 on a cold, windy, rainy day and end up hating, even trashing online the PB brand.

    @@fussywalrus it's not outlined in the manual, which even PB reps admit is convoluted in it's language. This topic is also one of common discussion in various FB Pitboss groups and there is a typed explanation in those groups which was written by PB grill masters and in conjunction with PB service reps to more fully explain how the P setting works. When I'm by my computer at home, I'll try and upload it here if I'm able. However you're welcome to join any of the common PB FB groups and request for someone who has it to share it.

    Hey Robert, I’m not trying to get people to hate or trash the PB brand, as I recommend there grills to whoever asks me about them. I made this video based on my findings after 2 years of use. My findings are not based off forums or PB FB groups they’re based off hands on use over the period of said time. I don’t even have any issues with this in the dead of winter where we get really cold days here in the negatives. What you’re saying I’m not disputing as that might be the case for you in FL. Where I’m located I believe I explained it correctly as to how the grill operates here. From the feedback I’ve gotten from other PB users they seem to be pleased with this and working for them too.     @@paulsq_ I hear ya. However, the p setting does what it does in Florida or Alaska. It isn't an opinion or experienced-based variable. The groups and forums I've mentioned are no different that your hands-on use experience. In fact, that's multiple user's hands-on experiences combined. More experience > one experience. And I'm not saying your intention is to get people to trash their grills. I'm saying that is the result of incorrect information given out, which yours is. You do have the right to hold to being completely wrong though! That you've never had a problem with operation is not surprising. Fire heats food. Cavemen succeeded with that. Boy Scouts with coat hangers and a fire pit do this. So cooking food with fire can be done by just about anyone with relative ease. But the whole reason for buying a PB grill is its controls and features. Otherwise, just go to the store and buy a little round charcoal grill and cook away. My dad never changed the oil a single time in any vehicle he owned, believing it was a waste of time. He never had an issue as a result of poorly maintaining engine viscosity. That he successfully dodged a bullet does not mean he was right - just lucky.
