Pineapple Upside Down Cake

A moist pineapple upside-down cake bursting with pineapple flavor! This cake is sure to be a family favorite!
Ingredients:
Topping:
1/4 cup unsalted butter, melted
1/2 cup granulated sugar
8-10 pineapple slices (blotted dry with a paper towel)
8-10 maraschino cherries (blotted dry with a paper towel)
Cake Batter:
3/4 cup unsalted butter
1 1/4 cup granulated sugar
3 large eggs
1/4 tsp salt
1/4 tsp freshly grated nutmeg
1/2 tsp vanilla extract
3 tbsp evaporated milk
4 tbsp pineapple juice (or heavy syrup from canned pineapple)
1 3/4 cup all-purpose flour, sifted
2 1/4 tsp baking powder
Bake in a preheated oven at 350 degrees, until a toothpick inserted comes out clean.

    Hi, I will post an eggless version very soon. You can substitute the flour with almond flour, that will give the cake an amazing taste and texture. 😉

    @@joyfuloven thank you! We have but allergies and can't use almond flour either...I bought a glutin free baking flour, but it gets a bit chewy...

    @@joyfuloven yes and it's so chewy lol we also have egg and wheat allergies and haven't found the right rising agents combination...
