It helps to freeze the bacon a bit to help keep its shot glass form. Also put the mixture in a zip lock bag and snip a corner off and squeeze into the shot glass! Cheers
My son on Bones and Brews BBQ does these with home made jalapeno pimento cheese topped with your meat church seasoning and a jalapeño slice. Very Very good. They have become my go to for BBQ starters
Recipes and cooks are second to none. I have never been steered wrong by Matt. We have multiple spices from meat church and they are the real deal

Long time follower...love your channel. You are onto something with the tailgating videos. Even if they are short- they are diff and interesting/idea inspiring We are Memphis Tiger season ticket holders and we had an absolute BLAST at the Cotton Bowl vs. Penn State at the end of December 2019 before things went to hell. That stadium is BAD ASS. Looking forward to going back for a Cowboys game. Love Drew Pearson and so many others. Jay Novacek, Randy White, don't get me started. Go Cowboys!

Alright, I went and tried my hand at these pig shots. They turned out good. Did them exactly like you did them, except I used a frosting bag. 350 on my Weber SmokeFire, for 45 minutes. Like I said before…love this channel, and your work. Keep it up.

Just got done putting 4 dozen of these together for a family gathering later today. I used a cheese ball knife and a small pairing knife to stuff the "shot". Scoop a small amount with the cheese ball knife and scrape it in with the pairing knife. Worked so smooth, no mess . Gonna fire up the smoker in alittle while.

These will be on our Super Bowl Party Table. Thanks so much. The other item that we will be making is an appetizer we found in a Mexican/BBQ Restaurant in Burnet Texas called the Mexican. Unfortunately they are no longer in business. They called them, Angels on Horseback. A large shrimp butterflied. Place a slice of Jalapeno and Monterey Jack cheese into the butterflied area and wrap the shrimp with a half slice of bacon. Toothpick it closed and smoke on the pellet smoker, 375 degrees for 30 minutes. They will go so good with your Pig Shots.

I'm a Steeler fan so there's no Cowboy love but you know I gotta make those!
I’m doing these for a christmas eve party. Not going by a recipe but I’m using ranch dressing mix for the spices and going to smoke them lower and slower probably around 275
We live on the MS Gulf Coast and watched the Cowboys and Saints play in NO this season. Always been Saints fans, but I'm a MSU graduate so we love us some Dak Prescott! Started following the Cowboys heavy when he went there and haven't stopped. Hope to make the game this next season which I anticipate will be in Dallas. If we do, we'll see if we can stop by and say hello in the tailgate area! Really like what you do and I will definitely be trying this. Quite possibly for the Superbowl this year.
While I tried this recipe this past weekend it was great tasting and very tasty. Unfortunately I use my thick cut bacon from my deli which was about a quarter inch thick, I will use bacon from something like farmer john which is thinner and will crisp up better than my bacon. I used Johnsonville smoked brat sausage as the base and these shots were the best ever!!

These are fantastic! We added a little brown sugar on the bacon... didn't hate it!
I added a can of Rotel and cayenne pepper to the cream cheese. Ridiculous! Great idea, thanks!
We add a little shredded cheese to the top just before pulling them off the smoker. Liked and subbed.

What size generator do you use to power your pellet grill?
I've made something like this before, but instead of beef sausage, I used li'l smokies, and I left out the filling, and instead of bacon, I wrapped them in crescent rolls, and instead of smoking them, baked them in the oven.

I do something similar, but the filling is a crushed pineapple/brown sugar/coconut rum mixture, topped with pecan pieces (called Luau Bacon Shots). This looks more tailgate friendly though (less sticky). Cheers!

Honestly I cannot say enough good things about it. With one Traeger plugged in it said it was going to run over 29 hours. It’s light, obviously makes no noise. It’s amazing for tailgating.
I am trying this for poker night.

As far as prepping goes putting the filling in a ziplock bag then just cut the corner off and squirt it out then throw the bag away, easy peasy.
I used to love the Cowboys way back in the Leroy Jordan days. When they lost the Superbowl (to the Steelers?), my big sister goaded me and made fun of me to the point that I started crying I was so distraught. Too bad wokeness and kneeling ruined the NFL for me, because tailgating is fun!

I think using a piping bag (Ziploc with a corner cut off for us people who hate lots of clean up) would be easier to do than spooning that cream cheese in, wouldn't it?

Not a stupid question. Must be pre,-cooked. Look for refrigerated Eckridge rope sausage at store; comes in a few varieties. Cheers!

You will want to turn the burners on one side but cook these over the side where the burners are off (indirect).
