    I used a packet of velveeta cheese sauce in the mashed potatoes instead of the shredded cheese. I like the way it incorporates in with the mashed potatoes. I love this recipe when I want a meatless dish!

    Don’t use no boil noodles; there isn’t enough water in the potatoes and onions to soften the noodles.

    Add another layer of cottage cheese mixed with some ricotta cheese that’s how my grandmother used to make pierogi pasta. Always with a little bit of cottage cheese and ricotta.

    I don't think that would be something I would recommend for this particular recipe. Maybe with different pasta noodles, but not for this recipe with the lasagna noodles.
