    Yes! I also add ginger rounds and additional "seed" spices. A favorite is black mustard seed.

    - Quick writtrn recipe for personal use, just ignore - Water 1/2 vinegar, sugar, salt, seasonings/aromatics (E-Italian, peppercorn.) Boil. Thinly slice onion, crush garlic, jar. Pour brine overtop & let sit

    @@Deebo99​​The water/vinegar ratio seems to be 1:1, so you’d use a full cup of each and yield 2 cups of brine. I was likely just halving the recipe, but even if I did only use a 1/2 cup of vinegar, it still turned out great 👍

    It keeps well in the fridge, so make bigger batches if you use it often. I like it even better after a week or so.

    You can just eyeball the amounts with the onion, garlic, jalapeno. As for the vinegar, use a vinegar that is labeled as 5% acid. You can dilute equally with water if you dont want it to be strong, but pure vinegar will do a better job of preserving. She boiled her vinegar before adding it, which will allow the onions to be ready in just a couple hours, but you can also just use room temperature vinegar if youre willing to wait at least 24 hours. Store in the fridge and it'll be good for at least a couple months. Not sure if she added sugar or salt, you can if you want but its not necessary, but hey its up to you if you want to try it.

    Why would you bring apple cider vinegar to a boil? You just killed all the beneficial compounds in ACV. Just bring to a warm temperature so the salt dissolves and then add the vinegar and add it to the onions.

    INGREDIENTS 1 large red onion thinly sliced (you can also use white or yellow onion) 1 serrano pepper thinly sliced 4 cloves garlic peeled and smashed For the brine 1 cup water 1 cup vinegar plain or apple cider vinegar 1/4 cup sugar 1/2 tbsp salt 1/2 tbsp whole peppercorns 2 bay leaves INSTRUCTIONS Add all the ingredients for the brine and stir gently to ensure everything is well mixed. Once the mixture comes to a boil, turn off the heat and let cool. While the brine cools, slice your onion and pepper and peel your garlic. Add all the ingredients into a jar(s). Once the brine has cooled, carefully pour into the jars. Be sure to leave about 1/2" of space at the top. Seal and allow everything to sit for at least 1 hour or overnight before serving. Enjoy as a garnish or topping on sandwiches, burgers, eggs, salads, etc.
