1 teaspoon Urad Dal
1 teaspoon Chana Dal
1-2 Green Chillies, chopped
1/4 teaspoon Turmeric Powder
Salt to taste
1/4 cup Indian Gooseberry (Amla), chopped
1/4 cup Fresh Coconut, grated
A few Curry Leaves
2 tablespoons Coriander Leaves, chopped
Instructions:
1. Rinse the rice in water until the water runs clear. Soak the rice in water for 30 minutes.
2. In a pan, heat the ghee or oil over medium heat.
3. Add mustard seeds and let them splutter.
4. Add cumin seeds, urad dal, chana dal, green chillies, and curry leaves. Fry for a few seconds.
5. Add chopped Indian gooseberry and fry for a minute.
6. Drain the water from the soaked rice and add it to the pan. Fry for 2-3 minutes.
7. Add 2 cups of water, turmeric powder, and salt. Mix well and bring it to a boil.
8. Reduce the heat to low, cover the pan and cook for 15-20 minutes or until the rice is cooked and the water is absorbed.
9. Turn off the heat and let it sit for 5 minutes.
10. Fluff the rice with a fork and add grated coconut and chopped coriander leaves. Mix well.
11. Serve hot with raita or any curry of your choice.
