Perfectly Flat Fried Basil Garnish
This is a super simply method of frying herbs to keep them perfectly flat and completely in tact using equipment you have at home. For these flat fried herbs, I used basil but you can use tons of other herbs like parsley, sage, even baby kale. They are a great garnish for all sorts of dishes that not only add colour and interest but also crunch which is a great way of adding texture. I'm not one for adding something to a plate that you can't eat and enjoy so these are really one of those garnishes that doubles as an important textural and flavour element of a plate. All you need is some oil, herbs and a microwave and you can make these at home or at the restaurant.
When traditionally frying herbs they tend to curl under and can often break apart in the fryer which can be quite intense for such delicate leaves. This is a great way to make sure that doesn't happen and will give you perfectly flat, whole leaves every time. To store these simply place them in an airtight container at room temperature and store the leaves flat between two pieces of absorbent paper towel. This will continue to help absorb any extra oil that is left in the basil, sage or kale and make sure that the leaves don't go soggy before you use them.
Note: I learned how to make these from one of my old culinary teachers but the technique originally comes from Chef Heston Blumenthal of The Fat Duck. While recipes and techniques are meant to be shared and enjoyed by everyone with recipes such as these that are so original and unique I always try to give credit where credit is due.

I made these basil chips this week to go on a strawberry, beet, balsamic vinegar and basil tart. I have to say it was super easy, quick, very beautiful and tasteful. Although these look great, when I made my own it didn't taste particularly pleasant. This could be down to the basil itself, of course. But I found a tiny sprinkling of sea salt afterwards helped bring out the flavour. Next time I do these I'm gonna add some sea salt after the oil and see what the results are like. 😊 Edit: this works with sage, too. However, I lightly seasoned the leaves with salt before cooking and then again on the kitchen towel. Tasted great! 😁

Thank you! A lot of my inspiration comes from working in restaurants for the past ten or so years, I also read a lot of cookbooks and love looking at what chefs I admire are working on via instagram and such :)

Does it taste good? I've been working on refining a chicken parmigiana recipe, and today an idea struck me to add some deepfried basil leaves as a garnish. I've not tried it yet, although this appears to be exactly what I've been looking for. Greay video, chef! 😉

Fry them in fryer at 170°C for 2-3 minutes.

Try dredging them in oil, placing them between two sheets of parchment paper, and then sandwiching that between two sheet pans before putting them in the oven. It works for getting super crisp and uniform bacon crisps, so I assume it should work for herbs

Thanks for the awesome compliment! Hmm i think maybe for flower petals I’d soak them in a simple syrup and then dehydrate them at a really low temperature? That would be my best guess but flower petals are so delicate it might be tricky! Dm me if you try it and it works!

I’ve tried this tonight, the plastic doesn’t melt onto the basil leaves or the plate. They stay flat (but not crispy) because they’ve been cooked a little whilst being kept flat by the cling film/plastic wrap. It’s like ironing a shirt.

Hey there, sorry to hear that! I just use the yellow no name brand at home and then the brand (not sure the name) that comes in to the restaurant from Sysco. Hmm. Maybe see if you can fiddle with the microwave strength?

Melting isn't the issue. You should not be recommending to people that they cook food in plastic wrap. That is incredibly toxic, especially with the use of oil in the process. Leaching, the diffusion of chemical toxins from the plastic into the food, is well known to be accelerated through fats and heat. Any non food grade plastic (and even those) when heated to certain temperatures (unless through incineration, around 1000c) will leach toxins, specifically dibenzofurans/dioxins and potentially also diethylhexyl adipate (an endocrine disruptor linked to breast cancer in women and reduced sperm count in men).

What type of plastic wrap are you using and is it safe and does it affect the taste because I’ve microwaved plastic wrap on accident before and it melted on top of the food and a lil taste of fish tasted overwhelmingly wrong and it was only a min in the microwave

Unfortunately I think a lot of the science behind this and why it works has to do with how the water molecules bounce around the microwave so I don’t know of an alternative way to do this and get the same results.

Did you try another oil? I'm guessing it would be OK as heat higher than the smoke point would just destroy these. I just tried at 2:30 and melted the plastic together. I"m thinking sub 1:00 next time.

I wouldnt recommend it.. might be too greasy. If you put the basil leaves in simple syrup then dehydrate them that would prob be more appropriate for a drink (would look the same but be sweet)

I completely agree. The use of plastic is out of control in many aspects of our lives and a lot of people in the culinary world are ignoring basic health rules like cooking with plastic like sous vide and cooking food in plastic wrap.

Yes, it is. It potentially releases BPA among other things. Plastic wrap is not intended to for cooking purposes, and so there is no regulation as to the type of chemicals used in its production that will inevitably leach out when it's heated.

Olive oil is generally much healthier. Canola oil is cheaper. Sunflower or avocado oil are more low-key & don't obscure the basil flavor like olive oil. However, the more salient issue is that no one should be cooking with plastic wrap like this if they want to reduce their cancer risk.

Considering that the term fried denotes something in oil at high temperatures it's correct to say it is "frying" the microwave is isolating and stimulating those fat and water molecules and the maillard reaction is doing it's thing. It's a strange and unique method but it's not wrong.
