INGREDIENTS
Enchiladas
1/2 cup all-purpose flour
1/4 cup rendered lard, divided
1 pound ground beef chuck (20% fat)
2 large tomatoes, cored and finely chopped
1/2 white onion, finely chopped
3 garlic cloves, finely grated
Kosher salt
1/2 cup chili powder
1/2 teaspoon ground cumin
5 cups low-sodium chicken broth
8 (6-inch) corn tortillas
1 1/2 pounds sharp cheddar cheese, shredded
Porky Beans & Pico de Gallo
2 (15-oz.) cans pinto beans, or equivalent amount of freshly cooked beans and their liquid
1/4 cup rendered lard
2 large tomatoes, cored and chopped
1/4 white onion, onion, chopped
2 jalapeños, finely chopped
1 garlic clove, finely grated
1/3 cup cilantro leaves with tender stems, finely chopped
3 tablespoons fresh lime juice

I also wanted to mention that I will also be visiting my family for the first time in years soon and will be making enchiladas as well just like you and your dad are.     My family makes enchiladas like that! I never considered calling it a casserole style, but that's exactly what it is. Every Christmas Eve, we make an assembly line and fill the largest sheet pan edge to edge. The leftover sauce is considered liquid gold and eaten with eggs and leftover rice.

    Wow freezer refried beans- gotta try this & I forget about toasting flour- such a good tip. You always do ALL the things to boost flavor. Thanks for including your Dad visit & his beans! Wish I could park my feet under your table.🤟

    I do this all the time!! I recommend freezing the refried beans with some extra bean liquid. I add a ladle or two (depending on how much I'm freezing) of the bean liquid on top of the beans in the container. I don't mix the two - just put in the freezer. I find the extra liquid helps the beans stay hydrated and prevents them from getting too thick when you reheat them. 10/10

    First you hit us with the return of the gorgeous nails, then your awesome dad (tell dad to stay safe - Texas is stuck in a "heat dome" and the power grid isn't going to be able to handle the demand {jfc Texas has been so screwed power grid/weather-wise this year} 😔) and then OMFG WHERE DO YOU GET YOUR SHIRTS???     I am so happy to see this recipe. Serious chefs never touch TexMex cause it isn’t “authentic”. I get it. But it’s authentic to my childhood and holds a special place for me. So really excited to learn real TexMex from someone who knows it well. Thanks so much for sharing Rick.

    I’m a Texas girl, and was living outside Salado, north of Austin until just a few weeks ago. We’re in the process of moving to upstate New York!!     I absolutely love cheese enchiladas. They are one of my all time favorite foods. They're the first thing I order any time I try a new Mexican restaurant. Unfortunately most restaurants really half-ass their cheese enchiladas so I'm usually disappointed. How I really judge Mexican restaurants though is by their beans and their rice. Really good beans on a freshly made tortilla with a little cheese is one of the world's most perfect foods. That's all to say thanks for the recipes. I really look forward to trying them out.

    as a kid growing up in LA, cheese enchiladas were my absolute favorite, standard thing to order whenever we went out for mexican food (usually a friday night treat). this is taking me back... SO much cheesy goodness! but then amped up even more with that amazing looking chili sauce! i'm literally drooling watching and now commenting about it. thank you for sharing such a delicious recipe from your family with us. and seeing your dad cooking - what a sweetheart! - was the cherry on top.

    Hey Rick , I had some shredded cooked chicken in my freezer. I used the Tex-Mex recipe and used the chicken . My dad loved them and had seconds which he normally doesn't. It was thumbs up!

    It makes me so happy when I come home from work and see a Sweet Heat video in my feed, because I KNOW it's going to be something lovely and delicious from Rick. These enchiladas look so amazing. I'm a little intimidated by the refried beans cooking method (ripping hot oil and water/liquid = 😱), but even if I took the lazy person's route and used canned refried beans, I think it would be so delish! That enchilada sauce? Sign. Me. Up! Also, how adorable is his dad?! ❣️ Also, too, I need a manicure, man! I miss me some fancy nails! 💅

Also side note I will never get over that episode where your colleagues at Bon Appetit were trying to "improve" one of your dad's recipes.     I recently made the enchiladas and beans for my family. It's a good thing I set aside some beans and 1 Enchilada for my lunch the next day, because the food was completely gone in 24 hours. Only 3 people but my grown son and husband loved them!
