In this episode of Sweet Heat, Rick Martínez brings us a recipe he's been wanting to share for about three years: a simple coconut-roasted fish with salsa macha. “It's really easy-you basically mix a bunch of really delicious spices with some citrus and coconut milk, then put this beautiful hunk of fish in the oven for about 20 to 30 minutes until it's just flaking and falling apart,” he says. I read Mi Cocina cover to cover to check it out and now I am cooking a new recipe every weekend and it is always the bright part of my week (making enchilidas mineras Right Now), I keep learning new techniques and if you guys like Sweet Heat you should buy that book. It is incredibly good at teaching you how to cook and how to get a feel for mexican food. It is also the prettiest cookbook I own and deserves to be loved. Like you. Love yourself and make some gorgeous food.

OMG, I'm planning a trip to Mexico this summer, can't believe we'll finally be in the same country
I am in Australia and as far as I know, there is no such thing as a fresh available tortilla here (apart from one made in a restaurant). The only ones I have seen are stale supermarket brands☹️. An episode on how to make tortillas from a variety of flours would be wonderful! Will definitely be trying this delicious recipe, but not in taco format.

I made salsa macha using another well-known chef's recipe. It is so good with many different things, especially shrimp. And it lasts a long time in the fridge.

Can you use fresh chilies instead of dried ones? I find it hard to get a hold of dried chilies on the East Coast.
