I don't get it. IF I understand you correctly, the higher the number, the later (i.e., most recent) the date when the eggs were produced. Which would mean that we want the HIGHEST, not the lowest number, because that would be the most recent date--depending, of course, whether it is early or late in the year. For example, it is now September. Eggs dated 199 would be much older than eggs dated 240 (of course, we need to pay attention to the time of year).

Didn't work cracking into a sieve, I just lost most of the white 😭

The problem is, if you don't have the freshest eggs, you lose most of the white, and that lost white would still be good to eat.

I'm going to see if my boss wants to do it this way if we ever open for breakfast again thanks to the pandemic. Never heard this trick before. I seen people put monkey dishes in the pan of water and drop them in 3 or 4 at a time but still haven't tried it. Maybe you should and do a comparison video...
