a german and a frenchman working together like this. thats a perfect pairing for starters. Eric and Aldo the both of of you are my HEROES when it comes to pairing of wine with foods. keep it up (y)
I love le B and the masterful cuisine of Chef Eric. however, when my wife and I have the pleasure of dining there, we always ask Som Aldo, "what are we drinking?" wine for its is a more than a gustatory experience. it's a trip to France, Spain, Italy, Germany, Austria, or even the Canary Islands without leaving NY. the description of the vintners, the geography, soil, etc amplifies the experience. I may forget the dishes on a multi course tasting menu, but always remember the wine... unless you know more about the 10,000 or so bottles on the wine list, or you insist on always drinking the same white or red because you haven't yet ventured out of your comfort zone, always, always, ask and trust the Best Som in the World, 2013 my favorite quote: "I am not a seller of wine. I am a merchant of joy".
