Anthony Bourdain's Seafood Stew
Serves 4-6
1 bottle dry red wine
1 tablespoon extra-virgin olive oil
1 green pepper, cut into ½-inch pieces
1 medium onion, cut into ½-inch pieces
7 to 8 garlic cloves, thinly sliced
1 tablespoon cumin
1 stem fresh oregano, leaves removed
1 teaspoon crushed red pepper flakes
4 large octopus tentacles, cut into ½-inch pieces
1 tablespoon tomato paste
1 (16-ounce) can crushed tomatoes
2 cups homemade octopus stock, or store-bought, low-sodium vegetable stock
2 Yukon Gold potatoes, cut into ½-inch pieces
2 cod fillets (7to 8 ounces each), cut into 1-inch pieces
12 little neck or top neck clams, scrubbed
Fine sea salt and freshly ground black pepper
French baguette, for serving
1. In a medium pot over medium heat, add wine. Simmer until wine is reduced by two-thirds.
2. Heat oil a large, high-sided skillet over medium-high heat. Add onion, green pepper, and garlic, and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add cumin, oregano, and pepper flakes, and cook, stirring, until fragrant, about 1 minute. Add octopus pieces and cook until juices release, 1-2 minutes. Pour reduced wine into pan; scrape bottom of pan using a wooden spoon to dislodge any browned bits. Add the tomato paste and crushed tomatoes and enough of the octopus stock to cover by 1 inch; bring to a boil. Reduce heat, and add the potatoes; gently simmer until tender, about 45 minutes.
3. Add cod and clams, and cook, covered, until clams have opened, 10 to 15 minutes. Season with salt and pepper. Serve immediately, with bread alongside, or the following day...it's even better.
Pulpo a la Gallega
Serves 4
2 cups ham, cut into 1-inch pieces (Jamon de Bayon or Prosciutto)
3 ribs celery, cut into 1-inch pieces
½ large onion, cut into 1-inch pieces
1 head garlic, cloves separated
1 tablespoon black peppercorns
3 tablespoons paprika, plus additional for garnish
1 bunch fresh flat-leaf parsley
1 (4 to 6 pound) whole octopus, beak removed and tenderized
Fine sea salt and freshly ground black pepper
Extra-virgin olive oil
Sherry vinegar
1 lemon, sliced in half (optional)
Place ham, celery, onion, garlic, peppercorns, paprika, and parsley in a large pot of water. Bring to a slow simmer over medium-low heat and cook for 1 hour. After 1 hour, place the whole octopus in the stock and cook, uncovered, until completely tender or can be easily pierced with a sharp knife, 45 minutes to 1½ hours. Remove the octopus from the cooking liquid and set aside to cool.
Remove tentacles from the head of cooled octopus, and slice into ½-inch pieces.
Arrange octopus pieces in a round shape in the center of each plate. Season with salt and pepper. Garnish generously with paprika. Drizzle with olive oil and a few drops of vinegar or lemon juice. Serve immediately.

I wonder if Eric has any pertiant information at the possibilities of other motives about Anthony being killed? He would be smart to never tell if he does. You might want to zip it up if you do. You might end up in a mysterious passing. These two look like great friends. They must have talked about everything. ⁉️. I wonder if he also knew about Ava having a relationship with Anthony’s 16 year old son?

@@daggermouth4695 ya know... you're not wrong. I never met anthony bourdain. However his ability to present him as that "cool uncle" made himself so relatable that people really do miss him dearly. He had an ability to relate that's pretty remarkable... but hes a bitch made douchebag for killing himself and leving his corpse for his "best friend" to find. I'd never do that to someone truly important to me. I say that as a person who struggles with similar issues. I respected the shit out of him till he pulled that bullshit.

I love watching Eric and Anthony together in the kitchen. The best and most fun of Bourdain’s episodes were when he invited Eric. So great!!!
RIP Anthony. You were truly one of the great chefs and traveller and TV show hosts we've ever seen. Condolences to your family and also yourself Eric, it would not have been easy to find your best friend like that.
I love you Anthony - this video makes me cry. I am glad, however, that Eric was your friend, because he truly loved you.

When Anthony was pontficating about TV Chefs endorsing commercial products, pharmaceutical, etc. for money, he said [paraphrasing here] " they will go on selling their crap... I'll be remembered as a red stain on the TV highway"... I can emphatically state, that you are NOT a "red stain on a TV Highway"; Anthony, you are a shooting STAR , we are in tears and you are incredibly missed. As Eric said at the end Anthony Bourdain, is irreplaceable. RIP.

@@jonathanstewart1519 Sometimes depression can ( FALSELY ) make one appear cynical, when their aura has been "hijacked", by the dark, hopeless clouds of despondency. When depression hits, I'm ashamed to say out loud "God, somebody help me, I am profoundly SAD".

Wouldn't you love to sit around with Anthony and listen to his stories, eat food he prepared and just chill out with him. We're blessed that so much footage of him survived his death. He's a huge loss to the world on so many levels-
This has been one of my favorite KZread gems to come back to. I love seeing Tony and Eric with their bromance, and that octopus stew looks fantastic! Who knew that 5 years later, Eric would find his buddy dead. What a tragic way to go :-/

Yeah! Eric is a French chef as well as Tony's best friend. So it was without a thought that Tony invited him to his Paris episode of Parts Unknown. Apparently, Eric found him dead in his hotel room. He was the first person I thought of when I found out. It's such a waste :-/

This man has taught me a lot about humility and self forgiveness...and striving to always do better in life and as a person.

Bourdain was a man He lived a full life and if you were anything like him possibly you would understand that he was tired. People that must continue to work work work to keep the demons at bay get tired of fighting the demons. Some may think the demons won but I can say that did not. Do not feel sorrow for a MAN that didnt, or doesnt, ever want sorrow felt for him. We were lucky to have experienced him so be happy and joyous.
I actually feel like I've lost a friend. Rest in Peace Tony :(
It's been years and I still come back to watch all his stuff cold 12 pack of cheap beer good food ac on and just enjoy the adventure!

I love the friendship between these two, especially the part where Ripert would like to know what its like to wake up with Bourdian, hehehe, and where Ripert didn't understand the bro hug "ahh french guys". This was very fun to watch while eating my infinitely lesser cooked meal.
I have only cried when 2 celebrities died. One was Tupac. The other was Anthony Bourdain. He is so missed! A man that connected the world through food and politics gone WAAAYY too soon!!!! May he rest in peace or be raising Hell! Whichever he prefers!

As this was an older production is was still pretty incredible to view. Two of the very best individuals in the cooking world come together with love, life & friendship. Honesty and truth shine through. Appreciations for this one!

I truly miss this man! Even though I've never met him in person, he truly touched me in a place that can't be explained.
The way Eric pronounced cumin and octopus is... ummm sensual.
Self loathing leads to self destruction and self destruction leads to self loathing. What a tragic paradox Anthony’s life was. Brilliant, interesting, articulate, boldly candid but he just couldn’t stop the inner raging....and his rage had no source, no target. That’s the saddest part. It was mind chaos and will anyone ever know why or from where it originated? In the end he was such an amazing and lovable LOVABLE guy. Tremendous loss. Eric embodies purity in every sense. What a beautiful, real friend for Anthony to have had. Just feel sad watching this today. Sometimes the ending of a life can be interrupted or thwarted as easily and as simply as a moment’s distraction by an unexpected call of a visit from a friend. A second’s delay can literally be all the time and distraction it takes to redirect a despairing person’s thoughts.

you should watch his travel shows. the guy is hilarious. he could narrate paint drying and it would be entertaining. his shows: The Layover, Parts Unknown with Anthony Bourdain, No Reservations, and A Cook's Tour. And you can watch a lot of those on Hulu for free.

as a professional cook i have to say that Tony has the perspective that so many of us do in the kitchen. Love and respect for food and serving that is under a shadow of a desire to do something much easier and more glamorous. But in the end we are cooks/chefs. An undeniable and almost predestined obligation. Also, who else would have us?
