Perfect Italian tomato sauce made from scratch with San Marzano Tomatoes.

Ingredients:
4 to 5 lbs of San Marzano tomatoes
1 small onion
3 tablespoons of extra virgin olive
Salt to taste
Fresh basil
Directions:
Step#1- Rinse tomatoes then using a serrated knife cut top off, slice in half and remove core. Cut in large chunks. Now add to pot with a tsp of salt and a small bunch of fresh basil. Heat on medium and lid on.
Step#2- Once tomatoes start boiling and releasing water remove lid and continue cooking. Let them cook for about 40 minutes.
Step#3- Let it cool a bit before straining the tomatoes using a food mill.
Step#4- Now you’re left with this delicious passata di pomodoro.
Step#5- In a pot add oil and onion and sauté until golden. Careful not to burn the onion.
Step#6- Add a little of the passata and let it fry for a few minutes and then add the rest.
Step#7- Bring to a boil, lower the heat and place your wooden spoon across the pot to support the lid. (Sauce should never be fully covered when cooking because the steam needs to escape to thicken. It should cook on a gentle boil in Naples called Peppian).
Step#8- Let it cook for another 30 to 40 minutes.
Step#9- Adjust salt and add fresh basil.
Note: You can use this sauce for eggplant parmigiana, baked pasta or simply over your favorite shaped pasta.

    Thank you so much! So glad I tell some of the story. I could say how special this sauce is to me, it would’ve been too emotional. This simple meal holds a special place in my heart. I had a friend and paesana in Long Island that I would visit every year around this time. My best friend Lina and I would make the 2 hour journey to Long Island. Teresa and Lina are both from my home town of Vico Equense. The minute we walked in Teresa’s home we were engulfed in the aroma of the sauce “peppiann” on the stove. As we sat and enjoyed every Ben di Dio that she prepared for us the sauce was just the best I’ve ever had. She would share the recipe every year, of course we knew how to make sauce but Teresa’s sauce era tutta un’altra cosa. The main ingredient that you can’t buy is the love to cook for family and friends snd that was her main ingredient. Teresa is no longer with us and when I make sauce from my garden tomatoes I always have a tears in my eyes. 🙏🏻The memories of that yearly meeting are held in my heart so dearly.

    Thank you for your recipe. I didn’t have a good amount of San marzano’s from my garden to yield the amount of sauce I needed so I added a jar of Mutti Passata. Came out wonderful. I prefer this method as opposed to how I always made it, blanching tomatoes and then removing skin and stems

    So fresh, so clean, nothing beats a beautiful passatta from San Marzano tomatoes 🍅, I love Summer when you get to pick everything from the garden, Jersey has the best U-Pick Farms too! I go to Hallocks in New Egypt at least twice a month to pick, it's my favorite farm!

    I'm so excited to be growing San Marzano tomatoes for the first time. I can all my sauce for the year. I can't wait to see the difference in flavor and having my own garlic, parsley, onions, peppers, oregano and basil it's homemade to the hilt.❤️ I hear such rave reviews of these tomatoes for flavor and canning them whole and for salsa it'll be a game changer.

    ❣️ My grandfather grew all of the tomatoes peppers garlic herbs everything in his garden in Pleasantville New York, And my grandmother would turn it into the most glorious sauces, Dishes, Pizzas...etc.. I have fond memories of standing at her side as a child as she cooked.. Her basement was like a country store full of jams and sauces that she had canned throughout the year.. Even brandied cherries!

    Very informative! I planted a container garden on my deck this summer and have San Manzano tomatoes, only one plant but it's full of ripening tomatoes. I wasn't sure what to do with them, so a search on KZread and here i am. Very simple. May only get a small amount of sauce but it'll be worth it! I don't have a food mill tho. Think I'll have to look on Amazon and hopefully get in the next day or so. I have planted Black Beauty eggplant too and my own basil. I love Eggplant Parmigiano! Will subscribe. Am in Canada!

    @@alessandrasfoodislove It turned out to be one of the best sauces I've ever had. The only bummer was I was surprised how little there was once it cooked down. I was thinking we'd have lots of extra sauce, but only made a little more than one meal. I guess we need to add some more tomato plants to our garden next year!

I normally use it only once a year to make cranberry sauce at Thanksgiving! I’m normally a canned tomato user - San Marzano, of course - but what’s better than fresh?! Thanks for sharing.

    Hi 👋 Alessandra I love 💕 your watching your videos we do the same thing,bushels of tomato 🍅 s boil the tomatoes 🍅 then put them in a mill to Separate seeds and skin s .we will be getting ready for September 4 2021 ,washing jars ,buying lids ,fill the Jars ,then canning them. It’s an all day affair.we get together with my Dad ,sister , and brother.and our children. My sister and I get the pasta 🍝 ready wile everyone else Is getting the tomatoes 🍅 ready for canning. Rummo pasta 🍝 is very good with our home made sauce,i love ❤️ hearing your stories,they are very much my stories too .     Dear Mary, How did I miss your beautiful message?!! 💖 you just reminded me of my childhood in Italy. It was hands on by everyone and so wonderful. In 1985 we went to visit and got dragged in a fare le bottiglie di pomodoro (canning tomatoes) it was so much fun!!! How very beautiful that you all get together to do this. It’s hard work but the reward is all through the winter when you use the Jars. Thank you always for your beautiful words. Give my love to your dad from a paesana. Un abbraccio forte 💖

    Thank you. I've been doing this for many years but peeling the scalded tomatoes and leaving the seeds in. I haven't noticed bitterness from the seeds but I am doing it your way next time. I do have a food mill so I'll start using it. Thanks again.

    I love how in every italian cooking video they say "about 3tblsp of olive oil" and then pour in half a litre! ;D though, the more the better it seems from my own experience!     I love Italian cuisine and I have an obsession with making sauce from fresh tomatoes. I usually use campari tomatoes, which are pretty good for sauce by the way, and I roast them in the oven then use my passatutto and pretty much cook my sauce the way you do. Oh I remove the onion/garlic after I cook them in the oil...have you ever tried roasting tomatoes for sauce instead of boiling them.stove top??

    Great job, thanks for posting. I'll be trying out the recipe this weekend. Two things that surprised me: #1 No Garlic? That's fine with me that's something I can do without. #2 No sugar. I'm not Italian, but I have alot of friends and acquaintances that are. I remember the old time cooks, if they didn't use granular sugar, would boil a carrot or two in the sauce to get the sweetness from them. After the boil they fished them out and discarded them.     I think you are a beautiful chef and the passion you instill in this recipe is so good too. I have cooked my whole life on the west coast of USA and have been up and down it in a heavily Italian and Mexican influenced restaurant world. I have mad respect for Italian and Mexican cooking, and I hope you like and follow me in my just now retirement! Bella! I know fresh garden San Marzan and beefy tomatoes need low seed count and maximum pulp for flavor. If you don't mind everyone, your tip of cooking a little bit of sauce in the onion is a real good one. You add the rest in without it though. Eye no problem! I make a reduction before the tomato. Hear me.. A glass full of White Trubianos or Pinot Grigio etc added to one large fine diced Shallot and Head of garlic after it sweats in Olive Oil is amazing to do. Then that pulp from the bottom of the Ricer until it reduces by half. Then all the tomatoes and cook until its Bella and stirred sometimes until it all makes an amazin taste.     I can’t get ahold of San Marzano fresh tomatoes, but I have a bottle of Mutti passata, and a fresh basil plant. I only use top quality pasta now (like Rummo, in my cupboard as we speak). I know what I’m making for dinner!

    There’s a story to that too. Lol My sister married in Italy in 1987 and it was part of a kitchen stuff wedding gift. Fast forward many years she never used it and gave it to my mom. My mom never used it and I eventually got it and love it. Like they say “one man’s garbage another man’s treasure” 😂 many viewers have asked me about it but I couldn’t find it anywhere. :(

    Hi Sandy, Absolutely! Since they have more water make sure to keep the lid off so it evaporates. Sometimes I do a mix of garden tomatoes just make sure they’re red ripe. Delicious sauce! Thank you always for watching cara Sandrina. 💚🤍♥️💖💖💖

    I can’t get San Marzano’s here in IN but I bought a case of Roma’s from a roadside stand. Should I drain the water from them before putting in the pot? I have made fresh tomato sauce many times but want to try it your way. I’ve used an immersion blender, not a food mill. I plan to freeze some for when my “baby” comes home on his college breaks.

    @@dawnpelliconecollins7926 hi Dawn, no need to drain. Just let it cook down. Fresh tomato sauce is never thick like canned but the flavor is sooo delicious. Leave the lid off, let water evaporate and stir frequently. Let me know how it turns out. 💖💚🤍♥️your baby will be so happy. I’m making some today for my 27 year olds baby 💖

    Hey Alessandra, Your video was exactly the homemade way I'd like to make my sauce. That being said, my wife and I did a large final harvest from our garden. We have a ton of San Marzano Tommies. They are beautiful, and we're ripening the green ones. I'm looking to can them for future pasta sauce. This is my first time growing them (which turned out great and very abundant) but I'm wondering about 'mass production' of sauce with your recipe. Should I just follow it 'tomato weight to ingredients ratio' with how ever much tomatoes I have?? Any recommendations? Thank you in advance.

    I like this simple recipe, first time I seen a tomato sauce with out adding tomato paste. Just wondering is using San Marzano from the can just as good as using fresh tomato's? Also growing them in a different soil (not Italy) will effect the taste? -cheers!

    The only true San Marzano are grown in the Vulcanic soil. The cans are pretty good.

    Alessandra, a couple more questions, if I may. Made the sauce this weekend and got four jars out of it. Am I correct in thinking that you jar the sauce AFTER the food mill preparation, but BEFORE the second 40 minute cooking segment? It seems to me you do the second one right before serving to reduce the water content. I'm using Ball mason jars I picked up at Walmart. Will the sauce last a while in the refrigerator or should I freeze them right off? Thanks in advance for any advice you can give me. Cheers. Mark

    Hi Mark, If you’re canning the sauce you just do the first cooking then can and boil the jars. Like this you can keep for months. The second cooking I do is to serve immediately or you can also freeze but not in jars. Hope this helps. I’m here if you any questions.     Thank you for watching. It really depends on the tomatoes and their water content. You want a nice thick sauce but not so dry where it’s like paste. Hope this helps.

    Just a follow up: I used my homegrown San Marzano tomatoes & basil. I ended up using a sieve @ spatula to push the pulp through. Absolutely delicious result! Thank you, again, for sharing ❤️

    Hello Richard, The oxo food mill is a good price and quality. It’s available on Amazon and bed, bath and beyond. I like that it has the 3 different disks. Hope this helps. So many fresh tomatoes this year! 💚🤍♥️💚🤍♥️

    @@Jilli-yb2tn I should’ve mentioned it in the video. There’s really no right or wrong just the flavors you grow up with. You can do both garlic and onion or one or the other. But please 🙏🏻 no powder only the fresh stuff including the basil. 😃 the flavor explosion happens with all the fresh ingredients. Thank you for watching and I love all the questions.     This simple meal holds a special place in my heart. I had a friend and paesana in Long Island that I would visit every year around this time. My best friend Lina and I would make the 2 hour journey to Long Island. Teresa and Lina are both from my home town of Vico Equense. The minute we walked in Teresa’s home we were engulfed in the aroma of the sauce “peppiann” on the stove. As we sat and enjoyed every Ben di Dio that she prepared for us the sauce was just the best I’ve ever had. She would share the recipe every year, of course we knew how to make sauce but Teresa’s sauce era tutta un’altra cosa. The main ingredient that you can’t buy is the love to cook for family and friends snd that was her main ingredient. Teresa is no longer with us and when I make sauce from my garden tomatoes I always have a tears in my eyes. 🙏🏻The memories of that yearly meeting are held in my heart so dearly.

These tomatoes have a huge reputation and boast a Protected Designation of Origin status (DOP, or sometimes written as PDO - Denominazione d'Origine Protetta) which specifies the precise cultivar, processing method and region in which the tomatoes can be grown.

    Question.....Why no just by genuine marzano tomatoes and make sauce with them? Growing them in Jersey!? hahahaha. Marzanos are named that way because of where they are grown, not the type of tomato.
