just curious if its cooked and microwaved how its considered raw? Im wondering as I buy raw cheese from the specialty store but now Im thinking It cant be raw if its cooked right?

I guess Im really wondering if there is way to make cheese with out heating at high temps and killing the good enzymes and bacteria the whole purpose of drinking raw milk

Once it's heated it's not raw anymore, bit pasteurized. Some cheeses though you need to heat it to give the bacterial culture in the cheese the opportunity to thrive.

For every gallon of milk you add 1 tbsp of citric acid to 1 cup of water
