6 cups glutinous rice soaked overnight (approximately 10 1/2 cups rice)
4 mung bean and pork filling logs (see video Part 1 for how to make these)
2 tsp salt
12 (11 x 11 inch) sheets of banana leaves, trimmed and washed
4 (16 inch) lengths of string
4 (9 feet) lengths of cooking string or twine

Thank you chi Trang for sharing the recipe. I've just made a batch of this cake today. Funny enough, my biggest pot doesn't fit all the cakes I made. I had to boil them in two different time. Although I helped my grandparents to make banh Chung when I was a little, but I never tried to wrap the cake myself. Your video is really inspiring me to make this cake this year. You're right. This cake isn't difficult to make, but very time consuming. I'm so excited so I have to try right away...not bad...:) than you... Happy New Year!

Hi Diep, although I love recipe shortcuts, there are some recipes that just can't be made fast and that's the case with these cakes. Since I only make these once a year, I really enjoy the entire process. It's very rewarding to unwrap that first cake after all the efforts. Thank you for sharing all your recipes. Your recipes always easy to follow. Can I cook this in pressure cooker? Is it same time with banh tet chuoi. Now, I have to try banh tet chuoi

Hi Kathy, you can pressure cook these cakes. For banh tet similar in size to mine, I pressure cook for 2 - 2.5 hours and then let rest in the water for at least 1 hour. I usually let rest in the water for the same amount as the cooking time. Good Luck!

we bought one of this cake , it s dry and hard.... is there a special way to eat it ?
Hi Chi Trang - I noticed when I unwrapped my foil there was alot of oxidation. Parts of the foil were black and brown. I was wondering if your foil had discoloration and whether or not it was still safe to eat. Thanks!

Hi em, the oxidation is normal and typically where the foil touches the water. Whether or not it's safe to eat has been widely debated. Here's a workaround: Wrap the cakes twice with one continuous piece of aluminum foil. That way, the oxidized portion is always against another piece of non-oxidized foil instead of the banana leaves. If in doubt, skip the foil or use parchment paper. I hope that helps!

+helen pham Hi Helen, Happy Lunar New Year to you and your family too! I am sorry to hear you're having trouble not tearing the banana leaves during washing. Regarding your questions, let the banana leaves thaw at room temperature first. Once they are no longer frozen, that's when you can start washing them. Here are some quick tips: Don't cut the spine on the leaf until after washing. The spine is sturdy and helps the leaf not split or tear. When washing, scrub gently and try to keep the leaf flat to reduce tearing (that's why I use a cutting board.) Also be sure to wash in the same direction as the veins and not against it. It does take a bit of practice. Good Luck em!

Thanks! A lot of people think the cakes are boiled. The trick is to wrap the cakes securely so they don't get all soggy during the long cooking process.

So you are saying they are "steamed" even though they are submerged in water (although they are tightly wrapped)? Is there a reason they aren't steamed? Wouldn't that be easier?

Doodah Gurl Because these cakes are pretty thick, steaming would take quite awhile but I am sure it would work. Some use a pressure cooker but I have yet to try it, maybe next year :)

Hi Trang, my son is dating a new girlfriend, who happens to be Vietnamese. We live in MS and she goes to college here. She is from Ca. We love her very, very much. I love to cook and to take on very challenging recipes. See has opened us up to Banh Mi. I taught myself to make banh mi by watching videos like this one and surprised her with lunch one day. She said it reminded of her home in Cali. I want to bring in the new Lunar Year with this recipe. Can't find the fancy string. Where can I get some like that? I know this sounds silly, but I like details. Twine doesn't look good. Help please.

I've never tried steaming the cakes and think it would take even longer than boiling because the cakes are so dense. If you were to make them smaller and thinner, steaming might be a good option. If you give it a try let me know how it turns out for you!
