PANCETTA Video Recipe - How To make pancetta - Home made

Home made PANCETTA - Sounds good doesn't it? Its very easy but there are some rules to follow.
Recipe:
Tip: Setup an excel sheet to have ingredientspercentage meet the weight of your pork belly
Ingredienst:
- 100% pork belly
- 2,4% Salt
- 0,26% Pink Salt #2
- 1,9% Ground Black pepper
- 1,1% Brown Sugar
- 4,3% Ground Juniper berries
- 1,9% Ground Nutmeg
- 0,07% Bay leaves
- 1,2% Thyme
Coating ingredients (for 1000 gr pork belly)
- 5 ground up bay leaves
- 2 table spoons ground black pepper
- 2 teaspoons chilli pepper flakes
How To:
- When nescessarry grind up the ingredients
- Rub the herbs and spices on to the pork belly
- Place the pork belly in a zip lock bag or a vacuum bag
- Store the pork belly in the fridge for 7 days
- Turn the pork belly every day
- At day 7 your pork belly should have firmed up
- Rinse of the pork belly
- Dry it with a paper towel
- Let the pork belly air dry for an hour
- Attach a string to the pork belly or a meat hook
- Rub in the coating ingredients
- Let the pork belly hang in a cool place, away from direct sunlight, and smells

Best Pancetta recipe on KZread. Hands down! It is dryer and cured to perfection. Do you do the dry curing in a controlled environment? I do mine in the garage from October to December because generally temperature and humidity are in the range. BTW, great video! Thank you.

That is simply awesome. I love Pancetta, I was surprised about 3 weeks. I know Prosciutto has a longer aging time, but I suppose in the bag it must work. I am just not familiar with this process.

Do I need to put it in a cryovac bag or will a zip lock bag be alright? Does the end product need to be cooked before eaten?

hi man, it look pretty fantastic!! I have a question. I'm Colombian and i live in a very warm weather place, so i have no places where i can take my pancetta for the 3 weeks but the refigerator. It works with 5°c to 10°c. May i take te pancetta into this and have a good product? Thanks for your attention. I'll be waiting for your answer. Good luck!

Hello, in the fridge it works very well, I installed a small USB ventilator and it makes it perfect. I have some 7 °C there.

Hey man, I just made your recipe and felt like it was quite little salt and sugar compared to a lot of other recipes but the spices you used were the most familiar to what I was used to growing up. I just made it, it's been in the fridge 7 days and I got next to no liquid come out of it. I only needed about half the rub I made to cover it in a thick layer. Reckon I should cure it longer or just hang it?

I didnt make this recipe but i would recommend try washing it off with beer or wine then dry with paper towel and add saltier mixture and cure for the rest of the time but hang it or leave on rack

I have a question here. I wonder if I can eat this raw, and how much longer do I have to age to eat it raw? It's late, but I'd appreciate it if you could answer.

If you use cure #2 and give it enough time to break down (a month+) it should be edible. I make the rolled variety doing the same thing (though I put it in a casing when hanging) and target a weight loss of between 30 to 35%. The actual weight I hit has a lot to do with how fatty the belly is; the more fat the less weight loss you will have. My last product took 5 months to hit 30%.

Can you tell me what is #2 pink salt. What is the difference from the normal pink salt

Actually Teskt toevoegen means "Add Text"....left over remnant of adding text?
I think it would’ve been better to give us the recipe for the entire dry rub then give us the percentage of dry rub to pork rather than give us each individual ingredient’s percentage but seems great.
