Pancake Cake! Great For The Holidays!
Maple Pancake Cake!
This will be a hit at any party!

Recipe
2 cups instant pancake mix
1 ½ cups water
2 TBSP brown sugar
Butter or ghee for frying the pancakes
Frosting
8 oz cream cheese, room temp
½ cup real maple syrup
1 TBSP butter, room temp
2 TBSP powdered sugar, sifted
Maple extract/flavoring (optional)
Pinch of salt (optional)
1. Mix all pancake ingredients until smooth.
2. Heat a medium size skillet over medium heat.
3. Spread a little butter in the pan, pour the batter into a 6-8 inch circle. Cook until the bubbles in the batter no longer collapse and then flip. (If you flip too soon they will come out uneven.) Cook the second side about 30 seconds. Remove to a cooling rack.
4. Repeat with remaining batter, keeping all pancakes the same size or as close as possible.
While pancakes cool completely prepare the frosting.
1. With a mixer, beat cream cheese and butter together until smooth and fluffy, about 2 minutes.
2. Add maple syrup and beat another 2-3 minutes. Add maple extract if using.
3. Add sifted powdered sugar and continue beating until smooth.
Place one cooled pancake on serving dish. Pipe or spread a couple of tablespoons of icing on pancake. Place second pancake on top and gently push down. Repeat the icing procedure with all remaining pancakes. Top with powdered sugar if desired.
