Pan de Siosa

Pan de Siosa is a "sister" of the classic ensaymada in the sense that it uses a very similar dough (most bakers actually use the same dough) but it is not as rich as the ingredients of the ensaymada. It tastes like ensaymada but it looks different. Instead of coiled, pan de siosa dough is formed into small balls and put side by side in a baking pan so they have a pull apart look. The classic pan de siosa is brushed with melted butter or margarine at the top after baking and dredged in sugar. The newer version now is frosted with butter icing and sprinkle with grated cheese on top or drizzled with dulce de leche. However way you shape or form the pan de siosa, the flavor will always remind you of the ensaymada.

    This bread was my dad’s favorite. Went to visit my folks in Bohol years ago. I noticed my dad always had this bread with his morning coffee. I am excited cuz I think I can bake this tasty bread. Thank you, Chef Rose!

    I am fine. Thanks! Hope you are too! Yes, you can use butter instead of shortening. The reason I used part shortening is so that the icing will be cheaper cost wise and also so that the icing will not melt. Thank you for watching!

    It depends on the quality of the shortening that you use. I always use Magnolia Primex Shortening in all my recipes. Anyway, you can go ahead and use butter instead. Butter will make a more delicious icing :)

    Good day Chef Rose. Thank you for this recipe. I noticed that your stand mixer is heavy duty. Can i knead the dough for 10 minutes at medium speed using my kitchen aid artisan mixer? Because i read in the internet that for artisan mixer, use speed 1 and 2 only for the dough, and knead not more than 2 minutes.

    I believe you can. Try using speed #4 for the dough. The tilt head type is not as sturdy as the lift type when it comes to mixing dough. Thank you for watching!

    Yes ma’am. Shortening and vegetable lard is the same. La in sad ang pork lard (mantika sa baboy).

    Yes there is a specific ratio but there are also other factors to consider. You can try to read more about this in bread baking books or do you own kitchen testing.

    Yes you can. Weigh 4 eggyolks and replace that with same amount of whole eggs by weight. For example, if your eggyolks are 50 grams, replace with 50 grams of whole eggs.

    Any vegetable shortening is alright to use. If you do not have shortening, you can just use 1/2 cup butter for the icing. The reason I used shortening is to reduce the cost of the icing and also so the icing will not melt. Thank you for watching!

    It will have a sour smell and taste. You can however reduce the yeast if you want to allow the sponge to rise longer. Thanks for watching.
