"Pampushki", Ukrainian/Russian dinner rolls with garlic and dill. Perfect with Borscht!

"Pampushka" is a small savory or sweet yeast-raised bun or doughnut typical for Russian/Ukrainian cuisine. Often served with Borscht or other soups.
Origin: Ukraine. Pampushka has a very fluffy texture and topped with garlic and dill. My childhood's favorite!
PAMPUSHKI RECIPE
Ingredients for dough:
300g(2½ cups)plain flour
150ml(½ cup)warm water
2 tsp active dry yeast
½(1) tsp salt
2 tsp sugar
1 egg
3 tbsp vegetable oil
Method:
In a large mixing bowl, combine: warm water, sugar and yeast, mix.
Add an egg and mix.
Add salt and vegetable Oil( I am using avocado oil), mix.
Add about 2/3 of all required flour and mix into thick paste.
Add remaining flour and form the dough.
Transfer onto table surface and knead until smooth in texture(about 5 minutes).
Oil mixing bowl and place dough in it.
Cover and let proof for 1 hour in warm place.
Make topping for Pampushki.
Pampushki topping:
3 cloves garlic(minced)
1 bunch dill(chopped)
2 tbsp vegetable oil( I am using avocado oil)
1 tbsp water
1 tbsp Maldon salt(for sprinkling after)
Mix all ingredients together and set aside.
When the dough has proofed, cut in half.
Roll each half into a "snake" about 1½ inch in diameter and cut into small pieces(about 30g each). Roll each piece into a ball and set them into a baking dish(close to each other). Oil dish first with 1 tbsp of vegetable oil.
Cover and set for second proof for 20 minutes.
Brush with bitten egg and bake at 360°F(180°C) for 25 minutes, or until golden brown.
While hot, spoon out topping and sprinkle with Maldon salt.
Enjoy with Borscht!

    Awesome recipe! I changed a little for my preferences: Heated the chopped garlic in the avocado oil to cook it, took it off the hear and mixed in the chopped dill then poured over the bread. I can't eat raw garlic find it too strong.

    Because this is also served in Russia, if you go to Russia this bread will be served in many places. There are foods that where created in Russia that are common in Ukraine households.

    My tata used to make the bread similarly but with plum jam. She called them pampushki, but all the other pampushki I see are savoury. Maybe Tata's were just donuts. :)
