Oxtail Stew Recipe | Inspired by Terri-Ann’s kitchen

INGREDIENTS:
* 9 medium/large oxtails trimmed
* 1 large onion chopped
* 1 sprig of fresh rosemary chopped, or 1/2 tsp dry
* 1/2 tsp fresh thyme chopped, or 1/4 tsp dry
* 1/2 tsp fresh sage chopped, or 1/4 tsp dry
* 1 star anise (substitute with 1/4 tsp aniseed or fennel seed)
* 1 bulb garlic halved
* 5 spring onions chopped (aka scallions)
* 2 finger size ginger sliced into tiles
* 1/2 tsp smoked paprika
* 1/2 tsp crushed black pepper
* 2 tbsp dark soy sauce or blackening sauce
* salt to taste
* 1 tsp vegetable oil as part of marinade
* 2 tbsp vegetable oil for searing
* 1&1/2 cups chicken or beef broth
* 1&1/2 cups water
* 1 green and red bell peppers cut into bite size pieces
* 2 carrots cut into bite size pieces
STEPS:
Combine cleaned ox tails with all listed ingredients, except bell peppers, carrots, 2 tbsp oil for searing, broth, and water. Massage all ingredients into oxtails till well coated and cover to marinade for 1-2 hrs at room temperature.
Heat up 2 tbsp vegetable oil in braiser pan over high heat. Remove oxtails from marinade, and place in pan, ensuring each oxtail stands alone, to avoid steaming, rather than a good sear. Sear all sides till a golden brown crust is formed on all sides.
Add marinade ingredients, and stir in to combine with oxtails. Add broth and stir to combine evenly, while deglazing bottom of braiser. Cover pot and cook on low heat for 1 hour.
Turn heat off. Remove lid, and separate oxtails. Strain rest of contents, rinse strained contents with water. Store strained residue in freezer, which may be used as a thinkening agent in your future stews or soups. Combine ox tails with strained gravy back in braiser pan, with lid on, and set back on burner, over low heat, for 1 hour undisturbed, till meat begins to fall off bone of oxtails. Add prepped carrots and bell peppers. Stir to combine and cook over medium heat, with lid off, till gravy is reduced to your preferred consistency.
Serve with rice and beans or mashed potatoes. You may also enjoy on its own.

I love Nanaaba’s videos and style of videos so much. Me and my man let ours marinate for 12 hours, added some brown sugar, and substituted sage for cilantro (mostly because we couldn’t find sage) and the way it turned out was AMAZING! Thank you Nanaaba for inspiring me once again ♥️

Great recipe!!!!! The flavor packs sooo many punches, going to have to make it again couldn’t find any sage near me so I used cilantro. It’s worth the work.
I made this recipe, and it came out so yummy! I added some orange sweet potato instead of the bell pepper. I am used to making a Hawaiian version of oxtail stew, but this was a nice change, and I love trying new recipes. :) Easy to follow the video.

Lovely. I enjoyed this variation. In England there is a Oxtail soup that I completely enjoyed. Been trying to find something like that in the states. This reminds me of it.
