They will melt in your mouth with every bite. They’re perfectly sweet and have hints of fresh orange juice and zest in every bite.
INGREDIENTS
400g (3 1/4 cups) all-purpose flour;
170g (3/4 cup) cold butter;
a pinch of salt;
100 g (½ cup) sugar;
1 egg;
1 tsp baking powder;
1 orange (zest);
1 lemon (zest);
40ml (3 tbsp) orange juice;
Powdered sugar;
Granulated sugar;
Orange jam.

METHOD
Whisk flour with salt and baking powder.
Combine cold butter with flour until crumbs form.
Whisk sugar, orange juice, citrus zest and egg in a separate bowl.
Pour egg mixture into the butter-flour mixture and knead to combine.
Wrap the dough in plastic and let sit in the fridge for 1 hour.
Divide the dough into balls 25 g each. Flatten each ball with your palms, fill the middle with jam and roll again.
Cover cookie balls with regular sugar first and powdered sugar second.
Bake for 12-15 minutes at 180C.
