Best knives ever period. Beautiful workmanship, low price, amazing quality, and a very “unscary” looking knife to EDC. I own a No.8 Garden and just got my No.8 in oak
Opinel had been around since 1890
As I understand it, and we are talking on the microscopic scale here, carbon steel holds a finer edge because it is more malleable and pliable, while stainless is more brittle and prone to chip. So you can use a leather strop to hone a carbon steel blade, and that 'unrolls' the microscopic edge that rolls up when sharpening, while a stainless blade's edge just breaks off o the microscopic level. I love Opinel knives, especially the carbon steel blades.

You have it backwards, carbon steel is harder- more brittle, than stainless. SS is softer and will bend more. Carbon steel does take a finer edge, and will hold its edge much longer than most stainless steel knives.
Is the walnut wood stabilised? I am just curious how well it will hold up in humid weather and occasional splashes.
from what I've heard from metalergists (and take it with a grain of salt) stainless is just as good as carbon steel, except that there's a lot of very cheap stainless about and they tend to put it in everything. I think if you've got good stainless it's high carbon steel anyway, just with a couple extra bits.
For some reason I can get my stainless Opinel a bit sharper than my carbon.
looks like you have opinels under control. please explain why yours has a locking mechanism that works from both sides, while mine can only be locked from the right side? did i get a fake opinel?

I got an Opinel 8 with Walnut handle,beautifull thing. But it doesnt have the sweet wood patterns like the one displayed,is there a procedure i can follow to bring them to light?

a light sanding then some linseed oil might help. could also just be the grain of that particular handle.

Carbon steel is actually harder than stainless. As such, it is more brittle and prone to cracking/breaking, whereas stainless steel will bend before breaking. Carbon steel will also take a finer edge, and hold it's edge longer than stainless. This is why many chefs prefer carbon steel to stainless.

@Nessi For low carbon steel, then yes, stainless steel is generally harder. But I'm referring to high carbon steel- which is what is used in blades. And generally speaking, high carbon steel is harder than stainless steel. It doesn't take much research to confirm this. That's not me saying that high carbon steel is always the better choice, only that it is harder than SS.
Is the oak a white or red oak?

i've read somewhere that the olive handle in particular is a bit acidic so it cant be used with the carbon steel

Stainless steel is much better, it won't freaking RUST (!!!) These blades come with excellent factory sharpness.. Nobody is trying to use these pocket knives as RAZOR BLADES 🙄

That's why most of your pocket knives are stainless. Plenty hard and sharp enough for what a pocket knife is supposed to do. And the high quality carbon steel is left to the work horse, camp, or tactical knives.
