Maybe due to having German grandparents on both sides, but I have been eating eggs with potatoes since age 5, now 78. Often fried eggs mixed after cooking, sometimes scrambled alone or with onion, bell pepper and even mushrooms, cheese, ham or bacon. Whatever sounded good and was available. Sometimes use frozen hash browns, sometimes fresh and fried.

Been eating this since I’m a child. Dad was in the AIR FORCE and was a cook. That’s where he learned to make it with fresh potatoes. LUV IT STILL 😊

Mrs. Sophie , very delicious looking recipe & i think i am going to add about a teaspoon of anchovy paste to this dish for that umami flavor. Some sourbread toasted on the side & buttered , with a cup of black coffee. It will be good

My parents would be angry with me too if i used so many eggs for a simple egg dish 😂 baking is understandable but a small meal is a bit much. In my household, maybe 3 is the max that can be used in one day to share with 3 people
