INGREDIENTS:
2 tbsp olive oil divided
1/2 onion sliced
2 bell peppers in slices
1/2 teaspoon salt
1 pound boneless, skinless chicken thighs in strips (4-5 thighs)
2 tablespoons taco seasoning (leelalicious.com/gluten-free-...) or fajita or chili seasoning mix
1.5 cups chicken broth
1 cup diced tomatoes or 1 large fresh tomato, diced
1/2 cup tomato puree
1/2 lb short pasta regular, whole wheat, or gluten free

Hey. I love to hear there is interest in my gardening journey. I am still in my first year of actually growing anything significant and still learn so much all the time. But I will gladly share my progress even if I feel far from an expert. And you can definitely do it! I’ve learned from several garden accounts this year that grow exclusively on their balcony in pots, containers, grow bags, raised beds, or grow tables. Nature is amazing in that if there is soil, sun and water, seeds WILL grow! We only can help it along and over time with experience we get better and better. I honestly don’t believe much in anyone having a green thumb. Just more experience 😄
