Onde-Onde | Pandan-Flavored Glutinous Rice Balls with Palm Sugar | Buah Melaka [Nyonya Cooking]

Onde-Onde uses glutinous rice flour, screw pine (pandan) leaves, palm sugar and is coated with shredded coconut. Made out of a combination of two types of flour, it has a chewy texture.
There are many varieties of [delicious kuih](/recipes/desserts) in Malaysia. One that remains my favourite is Onde-Onde. I have loved it since my childhood days.
As you bite into an Onde-Onde, the melted palm sugar flows out. I likened them to sweet little bombs as the sweetness explodes in the mouth. The shredded coconut further enhances the deliciousness of this kuih.
Use freshly grated coconut if you can get hold of it. Frozen shredded coconut can be found at some Asian grocers. You can freeze the Onde-Onde after making them. Just boil them whenever you feel like having them. As for the palm sugar, do scout for those which are darker as they are more fragrant.
Sometimes, the dough may crack during the cooking process. This is due to the thinness of the dough. However, remember not to make the dough too thick either. Wrap it closely around the palm sugar. Do not be discouraged if initially, it does not turn out the way you expected. Remember, practice makes perfect!

Kuih ini ada tiga nama, iaitu ondeh-ondeh da buah Melaka. Tetapi orang tua-tua di Alor Gajah, Melaka dan Negeri Sembilan panggil kuih kelepong. Orang Jawa panggil klopen (kalau tak silap bunyinya).

That is true. I usually shave it using a knife (be very careful) or even hit it with a pestle. Brutal stuff, I know. Haha. You can also try the palm sugar which is sold in a plastic tub. I find that soft as you can still scoop it out with a spoon, with effort of course. Good luck!

The only thing like that that I know of in my state is an Asian market that's nearly an hour away and I'd have to make a day of it, but no worries. Try the asian store near your area. As for the desiccated coconut, I got it at the baking section of my neighbourhood supermarket. Good luck!

I had a great challenge making this. I don't have a weighing scale so I converted it into cups. I didn't have pandan extract so I used essence n 60mls of water. First it was too soft n fluid like so I added more flour then it became too crumbly lol. In the end the balls were too soft. But I made a few to eat at home. Hope to try again soon
If you watch my kaya video, you will see how I extracted the pandan leave juice. There was a bit of water added but I would say that it's 90% pure pandan extract. From the supermarket, I think you can only get the flavouring. Just a few drops of that will do :)

thank you for the recipe :) lovely !! but, i didn't put any sugar in my Onde-Onde. only flour and Gula Melaka. not sure whether sugar is necessary or not, but... u gais may try ! superb easy recipe. tq for the guidance

With palm sugar cubes I found this neat little trick. Put them in the microwave for maybe 5 secs or so (play around a bit as each microwave is different). The cubes should not melt, by putting them a few sec in micro they will soften up and be more easy to break down.
Can I use tapioca starch instead of tapioca flour? It's hard to find tapioca flour..thx

Oh dear. Next time you can start with 30 ml of water and add bit by bit. Once it starts to be a dough, but still dry....you can add teaspoons of water. That was it wouldnt be too soft or crumbly :) Hopefully you will be successful with it and do tell me :D
Made this today. Tastes good but some pieces I didn’t cook long enough so still can taste the dough. Hahahahaha

Hi. All your recipes are awesome i jus wan to know some of the ondeh ondeh they didn't add tapioca flour but in your recipe you add may i know will the ondeh ondeh stay firm or flatten slightly after cooked and what is da purpose to add tapioca flourpls advise thank you
Hey Grace, I bought the sweetened dessicated coconut instead of unsweetened. Can I soak it in water to lessened the sweetness?
Great video work. I'd suggest maybe being more specific in how big are those mini balls, how much malacca sugar to put in each, and how many balls this recipe makes. Btw, can I substitute tapioca flour with more gluttonous rice flour?
Don't need to dilute if you are using pandan leaf essence (from supermarket) The pandan leaf essence is usually very concentrated. And you have to see what kind of pandan leave essence are you using, with or without colour. If your pandan leaf essence is translucent, just add a few drops of food colouring.

Hi grace, can I use corn flour as a substitute for Tapioca flour?

I used jaggery in my ondeh ondeh but it did not dissolve after boiling the balls. When I ate it, it was still crunchy inside. Any suggestions?
Can I store in the fridge after making it?
How many hours can i leave the onde onde out?? i am thinking of making it for my friends in univeristy and class is at 10am but i have another class at 8am. so is it fine?
Just follow the recipe, so...60ml of water and few drops of pandan essence. Try to make it into a dough and then add 1-2 drop(s) of green food colouring. If you find the dough is still slightly soft, add a bit of glutinous rice flour to the dough.
