今天来做马来西亚非常受欢迎甜点,椰糖椰丝糯米球Ondeh Ondeh,一款娘惹糕点,也称为Buah Melaka 因为看起来像马六甲树果子,而且也运用马六甲黑糖来制作而成。制作方式不难,带有斑斓香的糯米球,里面藏着煮化的马六甲黑糖/椰糖,外面裹上一层鲜椰丝。斑斓绿加上白雪椰丝,天然清新,小球好可爱。 糯米球软糯/Q弹取决于水分量和煮时间掌控,要越软口感越多水/煮越久。本身和家人都较喜欢软糯适中,加上斑斓香,椰丝润脆,咬下去浓甜黑糖暴浆,口感十足。童年味道回来了。
Today made popular dessert in Malaysia, “Ondeh Ondeh”, a Nyonya recipe, is also called “Buah Melaka” because it looks like the fruit of the Malacca tree and is also stuffed with Gula Melaka. The making process is not difficult. The pandan flavored glutinous rice balls contain melted Gula Melaka/Palm sugar inside and coated with fresh grated coconut outside. The pandan green and white snowy coconut shreds looks natural and refreshing, and the mini balls look so cute. The glutinous rice balls soft glutinous/Q chewy are determined by the amount of water and cooking time. The softer the rice balls, the more water/more time it boiled. Both my family and I prefer moderately soft glutinous texture, with its pandan fragrance, moist and crisp coconut shreds, and the melted Gula Melaka bursting when bite into, rich texture and flavor. The nostalgic taste of childhood is back.

=外层=
100克 鲜椰丝
1.5克 盐
1-2 斑斓叶
(中大火蒸10分钟)
=糯米球=24粒(10克/粒)=
73克 斑斓汁(10克 斑斓叶 + 90克 水)
125克 糯米粉
25克 细纱糖
20克 水
5克 植物油
50克 马六甲黑糖 (¼茶匙 = 1.5克-2克/粒)

100g Fresh Grated Coconut
1.5g Salt
1-2pcs Pandan Leaves
(Steam on Medium High Heat for 10minutes)
=Glutinous Rice Ball= 24pcs (10g/pc)=
73g Pandan Juice (10g Pandan Leaves + 90g Water)
125g Glutinuous Rice Flour
25g Castor Sugar
20g Water
5g Vegetable Oil
50g Gula Melaka/Palm Sugar (¼tsp = 1.5g-2g/pc)

    After puting the filling must straight away boil and continue the rest .add quater tea spooon of alkaline water or half tea spoon of air kapor to give the aroma of the kueh like kueh koswi and bouncing.

    这种做法和湯圆没两样,真正的做法糯米粉须要加上热番薯泥一起搓成团做出来的口感会更好才算是真正的Ondeh

    @@iwen777 我很喜欢妳的视频有些还要像妳学习,也许我比妳年长在我小时候附近地方经常可以买到马来糕点我也问了马来妇女她说是木薯粉和番薯做成,在六十七十年代市场上很少有糯米粉卖用糯米粉会比木薯粉容易制作,可能妳小时候的时代而现在的市场上所买的都改成用糯米粉也比较好吃。

    Hi Iwen, my friend told me that I can make the ondeh ondeh n rolled wif coconut and leave in chiller. Next day steam for 3 min and it will taste better, is this true? Hope can get reply fr you tks

    The dessicated coconut you can saute it(without oil) with salt cook until brownish colour the taste will better than steam :)
