7 to 8 cups sliced Squash
2 to 3 cups sliced zucchini
Total of at least 10 to 11 cups
1 large onion sliced
1/2 cup canning salt
3 cups white vinegar
3 cups sugar
2 t. Mustard seed
2 t. Celery seed
2 t. Turmeric
3 cups water
Process 15 minutes

    My Granny used to make squash pickles. I loved them. She passed a few years ago at 96. You said next you would be doing chow chow another favorite. I can't wait to see you again.

    I love pickled Okra. It's amazing this way. I only like Okra fried or pickled. Some people cook it down in frying pan like people do yellow squash or zucchini. But I really don't care for how slimy it gets cooked that way. I picked some crook neck squash other day because I was making refrigerator pickles with Mrs. Wages dill pickle mix and I had little juice left over and more squash then i could eat before they went bad. ( I know how to can but don't have pressure cooker, or any extra jars) and I pickled 3 half gallon jars. I was really surprised at how good they turned out. But I'm a dill flavored anything junky so others might not care for them

    Oh girl pickled okra is the best! Try out a store brand called Texas something, anyways they are really good ones. That way you can see if you wanna make it. So easy too

    The best way to preserve okra is to wash them, lay them out on a clean bath towel to dry COMPLETELY. Be sure they are not damp at all. Then put them in food saver bags, seal and freeze. They are just like you picked them from the garden when ready to cook.

    Miss Lori, I love your kitchen so much, it is so fascinating how you have forgone the typical cabinets and made your own from furniture pieces it is just wonderful, looks so cozy and so efficient I would take it any day over the new trend of minimalist or whatever you call it.. in fact, your entire home is this way.. so soothing!     We picked squash when they were 6 inches long. Sometimes, they were larger, and we scooped out the seeds and, grated the squash, and we made squash relish. We added a few hot peppers as desired.

    @@dianetucker2711 It would surely work, but I use beet juice instead of sugar....no pickling spices, but I like to add a few slices of jalepeno and some chunks of Vidalia onion too! I'm fortunate to live right down here in South GA where we can get them from the onion farms.

    Love pickled squash and this recipe. Where I live, the surrounding towns don't have any canning jars or supplies stocked. It's believed that the employees are buying it up and selling them at inflated prices online.

    Hi Lori . Those squash pickles are great . I've been making them for years. And yes, they taste like a bread and butter pickle. There is absolutely nothing more gratifying then at the end of your day after everything is cleaned up and you admire all your hard work sitting on a towel. Also, your house smells wonderful when canning pickles.

    It is so relaxing to watch you can your produce. I used to can pickles and relishes with my mother in law. I learned a lot from her. Lots of good eating during the wintertime. Those were the good old days.

    Yum-mee! Major pickle fans at our home. Over the recent 3 weeks we froze and canned veggies, plus shared some of our bounty of fresh-picked zukes (peppers, onions, and maters, too) with friends, far and wide. Plus, for the first time, we canned sandwich stacker style pickled zucchini using our refrigerator beer pickles recipe. Also, we recently found a recipe for baked zucchini tots. They were delicious, and will help add variety to the zukes menu choices this season. I'm excited for learning your chow-chow method. Suddenly, I'm craving toasted sour dough bread, spread with softened brie or creamy goat cheese, then topped with chow-chow.

    My Mama made Squash Pickles and we love them, so I make them every summer or two. We love to put it on peas and butter beans, and I love put the brine on cornbread. So good!

    Update on this recipe......... It brought tears to my eyes. Miss Laurie these taste just like my granmaws!     Thank you for sharing. I have a lot of yellow squash in my garden and this recipe will come in handy. I also have made zucchini sticks boiled in equal parts of vinegar and water then packed in olive oil, garlic and a touch of oregano.

    I made yellow squash relish yesterday using the same spices, plus pepper, that you used in these pickles! : ) I used ground mustard as opposed to mustard seed.

    Hi Laurie,... This is a old family favorite that my Mother and Grandmother before her used. I could not for the life of me find the recipe until ironically you posted this vid.     Hello Miss Lori. You are such a wonderful teacher. I think you say just the right amount of directions/reasons for even me a no experienced canner to follow you. I love put up veggies like this do I need to start canning. My moms and mother-in-law passed before I married so so passed down cooking skills or recipes. You make me ready! Thank you as always.     Oh young lady.... I love your set up. My mother in law has always done the Canning and shared and now I'm learning and I'm loving it. I only regret not starting sooner in life. There are definitely things (utensils, pans,, strainers, etc.) that can help make the job easier🤔🤗

    I've made pickled squash. A bit similar to how you do it. They came out really good. Nothing wrong with how you do it. A friend suggested that he liked to use them in his potato salad. I've used them in salads, and as snacks. I need to make another batch. Thanks for the reminder!

    Here is my Mama’s Chow Chow recipe ,just in case you have an abundance of green tomatoes at the end of summer. 2 gallons of chopped green tomatoes,1 gallon chopped cabbage,10 chopped bell peppers, 10 chopped large onions, Put In a large crock or bowl add 3/4cup salt, let stand 2 hours. Rise and drain. Boil together for 2 min..... 2 cups sugar,1/2 gallon vinegar,2 Tablespoons mustard powder,2 Tablespoons-cloves, 2Tablespoons ginger 2 Tablespoons cinnamon .waterbath 15 min. You can cut this recipe in half .Its awesome! I run my vegetables through a hand crank grinder.

    I tried your squash pickle recipe and I love them! I have never canned squash like this before but I am wishing I had found your video before my squash played out.     I don't know why ... but this video of you making these squash pickles made me so happy!! I have never had them or canned them, but it just brought a smile to my heart!! When my husband & I first moved to where I live now (27 years ago) my mama & I made bread & butter pickles in my kitchen (& salsa. too) ... I think I want to see if my mama wants to try to make a batch of these like you made ... we don't have any of this planted this year but maybe we could grab what we need from the Farmer's Market & make another memory. Thank you for bringing such JOY to my evening!!
