    Grew up with sauerkraut and now at 65, learning to can. Been scared, but tried anyhow. Pressure canned potatoes, waterbath canned cranberry sauce, pressure canned pumpkin, and now going to make your grandma’s sauerkraut recipe. Thank you ma’am.

    If it's canned not fermented why do you call it sauerkraut. I have been doing it exactly the way you do and enjoy eating it.

    @@roadstraveledphotography8440 Hi 😊 Im no expert but after seeing your comment here I was wondering if you resolved the problem you had with getting a good seal on those lids? If not, I’m wondering if you used brand new lids, not rings? Another tip, if you turn the jars on over onto their “heads’ on a towel on the counter over night to cool down, that can also help to get a good seal. ☺️ Don’t give up! Michella Payne

    It's good stuff for sure...BUT, very easy to overdo it with a huge helping of fermented anything, especially if one's body is not used to eating fermented foods. It's so good for your gut bacteria but you could get an upset or gassy tummy if you eat too much at one time. Hopefully, you did not. : )

    @@fizer718 I think she has the recipe listed in the description box. I don't exactly remember. I know the salt amount is listed as the same but I added a little less salt though.

    If you grow more cabbage than you can use, pull them up and leave the roots on. Dig a hole big enough to put the cabbage head in. Cover it up and leave the root sticking up. When the temperature gets about 34 degrees, pull up a head of your cabbage. It should be like getting a head of cabbage from the garden in the summer.

    Ms Lori, my twin sister Vee been saying.nothing but good things about you and Mr Brown. Finally your channel popped up on my you tube. I subscribed after the first video. I'm a mom of 14, and a Medical Dr. We have 2 sets of twins, and 2 sets of triplets. Our children range from age 20 to 5. We was Blessed that before Ace and I married his father, Grandfathers and uncles all got together and bought us land. We loved The mountains, Loved Tennessee. Decided to live there. We bought a lot of land. Now I'm glad we did. We build our own home. It took 2 years to clear the land. My husband designed our home. He spent 6 years in the military, I graduated at 16, got married at 17. I managed to finish Medical School, have my own practice before our first child was born. His family helped with the first 2. We were between Tennesee and Georgia. I had 2 greenhouses. It was not till 2013 after the first set of triplets and twins was born that I decided I wanted to raise all of our children together, I sold my practice, figured I could work in a hospital or work for a Dav hospital. Things don't always go as one plan. We had a home, plenty of land. I decided to just grow the majority of our food. It wasn't till 4 years ago we started raising more poultry. Clearing more land for fruit trees, doing a bigger garden. We have cows,hogs,chickens, this year with help I planted the largest garden ever, since Ace is now A Federal Agent that mostly work cold cases. Since the pandemic he works mostly from home. I grew a lot cabbages this year. Since I love sauerkraut. I been wanting to can as much as I can. Been watching other channels. Figured it's got to be a easier way to do this. I love canning beans, I've seen how you did Dry beans. Thought Bless you Ms Lori, you were indeed a answer to my prayer. Now watching you do sauerkraut this way. I know you are a Earth Angel. Thank you. If i ever meet you, i want to give you a great big hug.🤗. Our youngest will be 6 this year. We have been homeschooling since the pandemic. We are Blessed. My mother in law live with us she's in her 80s. But she give good advice. Poppop is 94, her brother, live on our property too and his wife. They are both active, love Gardening. So I've had some help.but I still manage to cook, homeschooled meals everyday. I love canning, and preserving. I love your channel. I've learned so much. Mama Rosa and Mawmaw Barbara. Don't cook much. I managed somehow. I'm all for quick easy meals. Thank God my children are not fussy. They eat what I cook no fuss. It's how I grew up, whatever my mom cooked, put on our plates, we ate.having 1 20 year old 1 soon to be 19 year old. They don't complain. Our oldest got married a year ago, aj and his wife are having twins in October, they have a house on our property as well. Bj and his girlfriend is getting married, in september, I'm suppose to cook a lot of the food. Thank God, we have Beef, pork and Chicken that we raised.that will help a lot. It will be another 15 years before we might be empty nesters. Thank God they are all Healthy. GOD MERCY, has kept us healthy and strong. Since I grew up on a farm and Both Ace and my Grandparents and GreatGrandparents. Raised a lot what they ate, both meat and veggies. I'm really new at canning, pressure cook in ng. My Grandmother used water bath can a lot. I'm learning, watching as many of your videos as I can in one day Again thank you. My Great Grandmother had 15 children. I guess I'm the only one who has as many children as she did. I've talked to much. God Bless you Ms Lori, Mr Brown. I love your channel. We are Country people, Who Love God, Thankful.     So thankful for this reminder...canned up 26 quart jars of kraut today...We are raising grandbabies and the 2 year old says..."MAmy, I want a cabb-apple...🤣." He thought the core looked like an apple, but knew that I was telling the others I was cutting up cabbage...he finally shows us...so my husband rinsed one again and let him have it ...🤦‍♀️... Ms. Lori...Oh my, that baby ate it down to the nub!!! 🤣🥰🤦‍♀️ Glad he likes garden veggies...but whew...say a prayer for our Potty Training days ahead!!! 🤣🤭🥰🤗 Love you guys here at LIVINGWATER Farm here in Central AR!     I want to thank you for your video! My Auntie Gudrun used to make this, she called it, “Norwegian Sauerkraut”. She’s gone now and I had lost the recipe. This means so much to me!

    My grandma would put it in the hot jars put on lids and rings then turn them upside down and cover with a towel so no cool air would hit it. She did her Dillys the same way. When sealed and cooled the jars went down into the big cellar under ground.

    I want to thank you for canning 101. This is the first year I have been able to grow heads of cabbage. My husband David built a raised bed with a hoop so our cabbage didn't get ate up. We like kraut and today we had heads of cabbage to harvest. I harvested the cabbage and went about canning it with David according to your instructions. We have our first 5 quarts of kraut thanks to you. Thank you so much. We are trying to can everything we can this year and you are our preferred person to watch for canning.

    All I do is shred cabbage, add kosher salt, cover with a piece of cabbage leaf, pour boiling water, debubble, and seal. I mostly don't waterbath. Been doing this way since an old lady across the street in Abilene, Tx, taught me in 1971. Haven't lost a jar yet. Usually wait 3 to 4 months to eat. Up to 67 jars so far this year.

    This reminds me of my Grandma canning. She water bath canned outside on a fire. And the jars would sit on the counter in the kitchen and wake me up as they popped and sealed. Bless you.

    Thanks so much for going over this method. This is the first year that I myself will be doing some canning. I started last week with fermenting sauerkraut in a crock and I'm wanting to try this method as well. I'm an outdoorsman and I would like to take it to another level as far as preserving food.     Canning is old school. Peaple now days could not servide with out fast food and take out. Please keep going, I'm 51, but I was tough how to live. I teach my son's, the old farming ways and canning for the winter.

    MY Grandma had a room off the kitchen and it had the water in it and what they called the milk and butter traugh where they keep obviously the milk and butter and eggs I loved it it was so cool during the summer

    Made this recipe back in September and put them on the shelf. Just broke open one of the jars today and omg...we ate the entire jar. Best recipe and now I can't wait for our cabbage to get ready in our garden. (I live in FL)

    Was yours sour like sour kraut is? I have done this recipe times and to me it tastes like plain canned cabbage. I didn't mind because I use more cabbage to cook with than I do sour kraut. But when it is boiled in water bath it does not allow things to ferment.

    @@rhondaoneal I like this one as it is not so sour. Just my preference. I do also make the fermented sauerkraut as well and you can also make that as sour as you want by the length of time you ferment it.

    You can also, if you want, pull the whole cabbage up by the roots, place 2-3 of them in a bucket, fill with dirt. Place in dark, cool basement. Water just a little once a week. When I do this they last till March/April or so. Or, if you cut the cabbage off leaving the root in the ground you will get several new heads about the size of a softball. Cabbage is great!

    We make ours with caraway seeds in a crock, then can it to keep it on the shelf. Thanks for showing your method. .

    After watching this, I'm craving a Reuben on toasted Rye, with plenty of warm kraut piled on....🥪....and a bratwurst smothered in kraut would be really good, too👍💖. Eating cheese, sausages, and hams from backyard smokers, plus krauts from big crocks is one of my joyful childhood memories of our neighborhood in the Strawberry Hill area, which overlooked Kansas City's stockyards 🍓🐮🐂.

    I love all of these, YUM!! One of my favorite Kraut meals growing up was with a pork roast, or tenderloin! Mom would lightly rinse the kraut adding it 1 whole onion slices and a Tablespoon of caraway seeds, salt and pepper, cook until roast is falling apart( like you would a beef roast, taters and carrots) and eat! Yum!!!! We generally use a crockpot, start around 8am eat at supper time!!

    Yummy...one of my big take-aways from a year in NY state (Eastern Long Island) away from my beloved South was introduction to an authentic Rueben! As soon as this is fermented I'll be at the deli for my corned beef!

    I make homemade pumpernickel, thousand islands and kraut. Then I go to Amish country and get baby Swiss and corned beef. Well ya all sure know what I do from there. Yes. Mmmmmm! Lotta work but so so worth it.

    I fixed this in Dec. 22, I opened 2 quarts in mid March, Added polish sausage, it wasn’t real strong taste like kraut, like between cabbage & kraut, my kids & even the grand kids , they love it, I also added 1/4 tsp. Pickle Crisp, I tried canning cabbage not satisfied with it at all, To mushy. Making more right now. The kids said you making it like that we ate the other day? YOUR GRANNY WAS ANGEL JUST LIKE YOU?     I usually ferment my kraut but have been looking for "grandma's recipe" and will be doing this tomorrow! I harvested about 50 pounds and fermented and pickled it and just grabbed my last 40 pounds out of the garden and will put it on the shelf. Thank you so much.

    I'm 62 and always thought you had to ferment sauerkraut. I've tried several times and ended up with mold. Well, this awful year ,I put in a big garden and cabbage is great. Thank you for putting kraut on my to do list! I love it too!

    Hey...my first batch had mold too!!! But I soon learnt that if you don't get enough juice from a head of cabbage as you are processinG it...simply add a salt brine on top of it to let it ferment properly!!! About 1 T of Salt to about 1 cup or a lil more of water!!! I don't buy fancy distilled water...I simply boil my kettle and let the water sit for a few hours and then all the Chemtrails in the water have settled down!!! Plz don't give uP...homemade Saurkraut iS de best!✌

    I'm 65 and thought as you did you had to only ferment for Kraft. Thus is so good to know. As I'm yrying to get my cannot g supplies a bit at Tim in my budget right then I'll do it.

    Thank you, Lori. I have been wracking my brain trying to remember how my great Granny canned sauerkraut. I am 60 now and I was maybe 8 or 9 the last time I watched her make it. I would go back and stay with her before school started in the fall. She would have pork neckbones with kraut, big butter beans, fried taters and cornbread. Oh, and a little saucer of sliced onion. It was awesome! Unfortunately, all have passed and I've had no one to ask how she did it. My feeble attempts were just that, feeble. Your video brought it back to me. That's how Granny did it. Again, thank you so much.

    Just want to let you know, I love your videos. I to am a southern woman. Grew up in Tennessee most of my life. Moved to Mississippi 2 years ago. This recipe is exactly like my Grandmamas recipe for making homemade kraut. Which came from her mother, in which was passed down from generations. It reminded me of wonderful memories of summer time helping my own Grandmama make this kraut years ago. This past week I planted 6 green cabbage and 6 purple cabbage. This year I am planning on making that generation recipe just like yours. Thank you for all you do and sharing your videos! Keep em comin darlin! God Bless Yall
