Cabbage
Salt
4 to 5 t. Salt per pound of cabbage
Brine 1 T. Salt to 4 cups water
Keep weighted under brine
Check after 2 weeks
I ferment 4 to 6 weeks
Then put in fridge

    many years ago I made my own saurkraut, had it in the garage in a crock and when my husband came home later from work he asked me what "died" in the garage, we had a good laugh over that, but it was the best kraut ever

    Love sour kraut...I was born and raised in Kentucky,and I live in Bavaria,Germany now...My husband is Bavarian..Now he eats more sour kraut then before he met me..LOL

    I grew up with sauerkraut. We ate it frequently even ate it on New Years' day for luck. I was not a fan of it as a child. I haven't had it since I was a young girl, but my tastes have changed as has my digestion, so I think I am going to give this a try. Thank you!

    You just thrust me back to the early 70's when I was a young boy 9-12yr old helping my grandmother make kraut.. She had a big crock and I used my dads baseball bat to pound.. At that time I hated that but as I grew up I am sure glad she taught me the old ways on canning.. You just brought back some real bitter sweet memories.. Thank you

    God bless you too. I'm so happy to see you and the family time you and Mr Brown making the Saur Kraut together. Also saw the bean jars, you have been busy. Sure it's putting smiles or Mr Brown's face seeing you making such good use of his hard work getting that outdoor cook stove set up for you. I love how y'all two make sure to show appreciation each to the other for the many ways you share the homestead load. I really do love y'all. Never met ya yet in person, but in the hard discouraging times of covid shutdowns shortages, you brought light in, and Lord be willing, I hope lots more time you'll be on this you tube that we can just stay in touch.     We never had a garden growing up but mamma always made sure to buy cabbage to make kraut.Always loved it.We loved it cooked with pork neck bones wonderful

    Yes... my dad always got neck bones from the farmers he worked for. My mother was from up north and hated some of the stuff he would bring home. She simply wasn’t raised in Ky where we were at then. He would buy sauerkraut at the store & cook it down with those neckbones. He taught us boys to try stuff & we did after seeing him eat it. I was surprised at the taste they added to the kraut. There wasn’t much meat on the neckbones but what was there was great to us as we were on G’ment food for like 10 years. Commodities as they called it then. So everything or anything different was a treat. I remember him bring a Whole Hogs Head split in half home one day during hog killing time. He opened the large bags up in the kitchen in front of us boys & my mother. Well she like to have died. She said are you crazy? Is that a pigs head? So Pop ended up boiling them in a big old pot then put them in the oven. We sat down to eat as us boys giggled and thought ummm, I don’t know about this dad. Try it he said as he reached over & got a piece off & ate it. We then dig in as we thought it weird but it was actually good. My mother cursed at my daddy saying don’t ever bring that stuff in this house anymore, but he didn’t pay her no mind as he was raised in Ky & grew up eating all these things. He would laugh as we would hesitate at eating some of the stuff he brought in & he certainly would always have to fix it because she wasn’t about to touch it! 😂 Is that a Squirrel she would say? Surely your not gonna eat that, or make them kids eat it. He would fry them up with maybe a rabbit, & we were like wow.. this is good stuff. But he was a pretty good cook also. Funny Times & Good Memories! Mama was like a fish outta water being from Chicago 😂😊🙏 God Bless Everyone!

    I like the idea of using a glass jar so you can see what is happening with the cabbage...and this is the second time this week that I saw someone use a bag of water to keep the cabbage down under the brine. Excellent ideas! 😁

    I was raised on home mad Kraut made like this. I do not like store bought. But all the ones that made it are gone now. So I get some that is in the cool cases now once in a while. Thanks for sharing and bringing good memories back.

    About 40 years ago, an 88 year old Bohemian lady showed me how to make kraut. Since then I can tell the difference in homemade and store bought. My grandmother used to let me set on the counter top and let me eat from the jar. I love kraut!

    My Grannie heaton used to make it like that .except she had two five gallon Crocks. Because of a big family. She would put it up in jars. When she got ready to use it she saved the juice for a laxative it's call tighten up and run for the outhouse. But she would fry the kraut man that and a biscuits was a meal.     I checked my sauerkraut this morning one day early only cuz I couldn't wait another day. LOL. It's perfect I love it and I ate a bowl of it so good so I took it out of the jug and put it in quart jars and it's in the refrigerator and believe me it's very very hard to stay out of it. So when I tried it a week ago I thought this is something that I need to make a bigger amount. So yesterday I went to the farmer's market and I got to huge heads and this morning I shredded them and I've got the next batch brewing in the jugs. Thank you so much for a fantastic video.     Saw man cute hole down center of cabbage then added salt and put in good water in old ice cream bucket and put lid on to pickle .

    Aww, thank y'all so much for this video. This is pretty much the way my Gramaw made her kraut. Even when she used a big stone crock and added apples as weights, this was how it was done. Bless you both and thanks for the lesson in self preservation.

    My Gramma used to put Caraway Seeds in hers and so do I. Sometimes she also put a few sliced onions. Gramma was German and Dutch. She could really cook! And bake pies and sweet rolls and loaves of bread and - oh, just about anything. Sadly my Mom never learned how to cook. Her baking the dog wouldn't eat. (He buried it because it was too hard!) He did that to my first loaf also. I got better though.

    Your videos bring back so many memories for me . My Mom used to put up sour kraut. It was delicious. I am disabled or I would put it up also . What I would do to be able to make some . The store bought is nothing compared to the homemade. Keep making videos because I love watching them.

    My daughter and I went out for supper tonight and I had a grilled Rueben sandwich with corned beef and sauerkraut, it was very good. Now I see this easy recipe and I am going to be making myself some kraut. I am of Dutch decent, but my late Mom sometimes made homemade sauerkraut as she made a Sauerkraut Borscht (that I didn't like at the time, so I never asked her for her recipe).

    I loved seeing the video about kraut. My brother used to do kraut and he had a big crock and we found him an antique kraut stomper; it had a long straight wooden handle with a big rectangle block shaped on the end. It was all in one piece, and it was heavy to stomp the kraut with very long. I just remember how good it tasted; love sauerkraut. Thanks for sharing, blessings to you both.

    Thank you this is very informative! My Mother who's 90 has some kraut fermenting now ! I think she would find your video very interesting ❤ she's using a large rock on top of hers!     My first glass crock like yours was purchased for me by my mother in law many many years ago, over time she has gifted me with 3 more just like it. I love to do pickles also with these crocks, and boy oh boy does Buddy eat alot of kraut.. I keep it made and everyday he eats a tab around noon as a probiotic.. thanks for sharing, God Bless My Friends

    @@sherrygallion4844 it's called The art of fermentation. It's by Sandor Katz. It's sold on Amazon but I can't remember the publisher. It's a great book 🙂

    I just started the sauerkraut fermenting. My husband and I love sauerkraut. So cross your fingers that it comes out tasty. Thank you for the tutorial.
