I make my own ice cream cakes for birthdays sometimes. I think I will use nutty buddies next time. I put my softened ice cream in a mixing bowl and use the beaters to whip it up, makes it like soft serve. It is then super easy to spread. I also use a springform pan.

Those are huge servings--I can't even imagine how many calories are in that thing! It sounds good and I hope everyone enjoyed it.
