Mary Rose Livingston, farmer owner of Northland Sheep Dairy, talks about her cheesemaking. This is one clip in a series of videos demonstrating how Northland Sheep Dairy in Marathon, NY raises 100 grass-fed dairy sheep and makes artisanal cheeses. This clip is from the Video Mentor series, produced by the Cornell Small Farms Program (nebeginningfarmers.org), filmed and edited by Peter Carroll of Ithaca, NY.     I would love to sit and enjoy some of these cheeses one day. The milk was shown great respect, each curd was touched and cared for, each cheese was watched over and tended. When someone puts that much care and effort into their product, when they speak with such reverence about their ingredients, when they have poured that much love into their craft then I think the finished product must be perfectly wonderful. I wish Mary Rose Livingston great success and can not wait to taste her beautiful cheeses.

    I appreciate how much effort it is. I make cheese too. And I feed and milk the cow. I use raw Jersey milk. I make excellent cheddar.

    So envious. I used to make goats cheese on a very small basis, only had 20 milkers, but I remember how satisfying this process is. Loved your video as nostalgia kicked in. Nice one.

    Wow incredible, you make me proud being a women, I with u, I no longer use animal rennet, once I really started looking into what rennet was, and what it does, I just couldn't in good faith, use animal rennet, and enjoy making cheese. Which I love to make. Now I can enjoy everything cheese making has to offer me.

    The best form of Milk has got to be Cheese! Butter comes a close second and Yogurt the third. In India, Milk Solids called as Khoya or Mawa form the base ingredient for almost all varieties of traditional sweets like Kaju Kathli, Gulab Jamon etc.

    I'm looking into dairy animals other then cows and sheep seem weird but... well, I kinda am weird LOL so it fits with all the particulars of what I need so well seems like the right choice. So I have a few questions since I've not had sheep (had goats). It doesn't seem like you need to separate the cream out in sheep milk, is that so and could I still make whipped cream anyway? How often do you need to freshen with a sheep? Thanks for your help!

    She is not making industrial pasteurized embalmed with preservatives dead cheese. She is making European style cheeses which are living things, full of bacteria and yeasts, very able to take care of themselves. They are always made with clean bare hands and a simple ring does not interfere. In fact the microbes and bacteria present on the hands are needed during the process. In Europe, where we have more than 800 kinds of cheese, the aficionados would look with distaste a cheese maker with rubber gloves, the stigma of the industrial dead cheeses ready to rot like a road kill. We are not afraid of microbes as we use them for making cheese. A cheese full of the good microbes does not rot, it matures.

    THE best cheeses have always been Italian and French, Now both in France and in Italy they have brought back the old school to give greater welfare to the livestock. Already in 1120 BC France and Italy produced wine and cheeses, these two countries the management of livestock is in the their lives and in their DNA, no one can get close to a culture of almost 200 years, the Americans now prpvano to make parmesan the salemi, tomato, champagne, wine.Now who wants to be a winemaker I have it enough to have land, a boss Italian or French construction site is all done .. One piece of advice from America you only make films. You finally copied our masters because holywood was in Rome Cinecitta For a couple of years I have seen new dairies that want to make a glue copy of European cheeses. ... IMPOSSIBLE, because livestock is 100% different as a breed, The air of pastures is the opposite of what you can also find in England, think how different it is-----
