Noodle Journey Supplement Review: Ramen Bae Spicy Garlic Mix

Today's review is the brand-new, long-awaited Spicy Garlic Mix from Ramen Bae! This product contains an assortment of dried toppings that you can add to your instant noodles while they cook.     The eggs are likely fishy and chemically weird because of the ammonium bicarbonate. It's an old school leavening used to make crackers and products you want to have a super-airy internal texture. The rub is that it has to be hot enough to burn off. My guess is whoever is making their eggs added too much, didn't cook them long enough, hot enough, or the mixture might have been too thick before baking it, so we got ammonium-smelling residue in the egg bits.

    I got mine a few days ago and was thrilled to see they put the spice packet in separately. I was able to speak to them a few months ago and they asked me what type of ingredients that I would want to see in this. As for vegans, they can put chili flakes into the vegetarian one. 🤷😂 It's pretty cool that they have a package of just fish cakes as well. I have everything.

    I wonder if they mixed bonito dashi in with the eggs. I'm feeling like they probably did and they probably used egg powder to make these.

    I like dashi, and it doesn't have that vibe to me, plus it's not listed on the package. It tasted somewhere between the fish cake and a chemical, so I'm kind of leaning toward the fish cake flavor being absorbed by the egg alongside one of the inert ingredients like corn oil. Really an odd flavor. Definitely not an egg flavor. Did you try yours yet? Curious if anyone else felt the same about it.

    @@thenoodlejourney I haven't tried it yet because we're still eating off of things I cooked already. I told them that I am a less spicy person than my partner so I was really glad to see that they took that into account when adding the spice. Really when you think about it the chili flakes would all have gone to the bottom of the bag anyway. If I ever talk to them again I might mention that a bag of dehydrated or freeze dried kimchi would be awesome as well. I totally agree with you that it would be great to customize our own bags but I'm sure that would be difficult for a small business. I'm with you on the green onions. I don't like eating ramen without it so I always add my own but I like fresh as opposed to dehydrated or freeze-dried ones. As for the eggs, I didn't tell them anything about eggs. I like putting a boiled egg in mine personally. Don't blame me. 😂

    I mixed a quarter cup of this to the already awesome Prima Taste Curry La Mian and made it IMHO supreme. I would pay good money for such a dish at a restaurant.

    I just got my bag earlier this week. I was actually quite excited for the dehydrated egg, as I kinda love the eggs in Shin Gold and Ottogi's Sesame. However, I can also confirm that this bag's eggs are.... very, very bad. The texture is alright, but the taste really is not good, chemical tasting is the best way to describe it. Very disappointing, but it isn't a dealbreaker for me. If the texture sucked I probably wouldn't buy this bag again, but the amount of garlic chips and the rest of the ingredients are too enticing for me. I do agree though that they should either be swapped to a different type, or swapped to an entirely different ingredient. At the very least, reweigh the egg amount in the bag, because it's not good enough to justify the proportion. So far, I've used the bag in Sapporo Ichiban's Chicken, and Nissin Demae's Black Garlic Tonkotsu

    Thanks for validating that I wasn't the only one having an issue with the eggs! I agree, not a total dealbreaker, which is why I gave them a middle-of-the-road score, but still such a disappointment over an ingredient they could have just safely left out.

    Yep, I would NEVER buy a mix with dehydrated egg. I love the idea of the added protein, but let me add my own eggs. Replace them with some kind of dehydrated mushroom, they're sometimes a little tough but at least they taste good.

    Agreed, I've seen a lot of people fawning over the dehydrated eggs on Ramen Bae's Facebook page, and my only thought is "Why?" I can see bringing Ramen Bae to a workplace where you might not have access to fresh eggs in order to ensure some protein gets in your noodles, but other than that one scenario I've never gotten the love for dried eggs.

    Just ordered a veggie bag and a spicy garlic bag to try for the first time. I’m sad they didn’t include corn with the spicy garlic. If what you say is true about the egg, they should swap it out for the corn 👌

    I'm not the biggest fan of corn in ramen, but I definitely think that would've been a good move. Since the video, some people have reported the same egg issue as me and others have said they love the eggs, so hopefully you get a good batch!

    Hey Chase! Yeah, I watched your review the other night. I know you said you experienced a general flavorlessness all around, but did you have any issues with funky-tasting eggs in yours, too? I know you seemed unsure about giving Ramen Bae another shot, but I found their Kimchi Mix to be far superior to this one.

    Get rid of the dehydrated egg altogether... It's not necessary. And to be honest if you want good tasting egg in your ramen just a crack a fresh one over your ramen as your cooking it before you finish and cook the egg to your liking in the broth on the stove.

    Apparently I'm not the only one who hated all the egg, and they've recently promised that in future batches of this variety, they're going to reduce the amount of egg in each bag. It's a step in the right direction. But I agree, I would be happier if it just wasn't there at all. Adding fresh egg to noodles is not difficult and comes out way better than what you'd get in a bag.
