우아한 망고 장식과 독특한 단면이 숨어있는 노오븐 망고 치즈케이크를 만들었어요~
안쪽 단면을 세로로 층을 만들어 굳혀봤는데 색다르고 예쁘고 깔끔한 무늬가 나온 것 같아요~^^
저는 15cm 틀 안에 12cm 무스틀과 무스띠를 이용해 9cm, 6cm 원을 만들어 사용했는데 12cm도 무스틀 보다는 무스띠를 사용하는게 제거하기 쉬울 것 같아요~
망고를 듬뿍 넣어 망고 맛도 많이 나고 정말 맛있었어요~*^^*
위에는 망고를 얇게 슬라이스해서 리본같이 자연스럽게 애플민트와 함께 올려 봤는데 우아한 느낌도 나고 망고 생 과육도 함께 먹을 수 있어 좋더라구요~~
크러스트 위에 살짝 보이는 노란색의 망고 층이 있어 밋밋하지 않고 포인트가 되어 더 예쁜 케이크가 된 것 같아요~~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
버터 비스킷 90g
녹인 무염버터 45g
갈은 망고 350g
설탕 70g
레몬즙 7g
망고 퓌레 330g
판젤라틴 7g
50% 정도 휘핑한 생크림 90g
크림치즈 200g
슈가파우더 40g
플레인요거트 50g
바닐라익스트랙 2g
판젤라틴 4g
50% 정도 휘핑한 생크림 85g
▶레시피
1. 부순 버터 비스킷에 녹인 무염버터를 넣고 섞은 뒤 15cm 틀에 넣고 꾹꾹 눌러 깔고 냉장실에 넣어둔다.
2. 믹서기에 갈은 망고와 설탕을 냄비에 넣고 끓이다가 살짝 걸쭉해지면 레몬즙을 넣고 조금 더 끓이다 불에서 내린다.
3. 판젤라틴을 차가운 물에 10분 정도 불리고 물기를 제거하고 전자레인지에 10초 정도 돌려 완전히 녹인 뒤 따뜻한 망고 퓌레에 넣고 섞는다.
4. (3)에 50% 정도 휘핑한 생크림을 넣고 섞은 뒤 틀에 조금 붓고 냉장실에서 20분 정도 굳힌다.
5. 틀 안에 12cm, 9cm, 6cm의 틀을 순서대로 가운데에 맞춰 넣고 가운데와 사이를 한 칸 띄고 그다음 칸에 망고 혼합물을 붓고 냉동실에서 2시간 정도 굳힌다.
6. 크림치즈를 부드럽게 풀고 슈가파우더를 넣고 섞은 뒤 플레인 요거트, 바닐라익스트랙을 넣고 섞는다.
7. 녹인 판젤라틴을 넣고 섞은 뒤 50% 정도 휘핑한 생크림을 넣고 섞는다.
8. 12cm, 9cm, 6cm 틀을 빼고 사이에 치즈케이크 반죽을 채우고 남은 치즈케이크 반죽을 전자레인지에 5초 정도 돌려 살짝 묽게 한 뒤
윗면에 붓고 평평히 해 냉장실에서 2시간 정도 굳힌다.
9. 윗면에 얇게 슬라이스한 망고와 애플민트를 올려 장식한다.

70g Sugar
7g Lemon juice
330g Mango puree
7g Gelatin sheet (or Powdered gelatin)
90g Whipped cream (whipped up 50%)
200g Cream cheese
40g Powdered sugar
50g Plain Yogurt
2g Vanilla extract
4g Gelatin sheet (or Powdered gelatin)
85g Whipped cream (whipped up 50%)

Lolita Luppens The ground mango is what you get if you smoosh or blend the mango flesh. The mango purée is the mixture of the ground mango cooked with sugar and lemon juice. That’s what I understood from the recipe and video.

It takes practice and effort. Also maybe the mango wasn't really that ripe that it has a bit of hardness to it. Or maybe the mange was chilled somewhat hard that it won't fall apart but easy to work with.

And a few people around me always say "eww" when i eat/drink something with mango.. and a popular drink in my country makes many flavours, one of them was mango and for 1,5 week now i can't find the mango flavour anymore... The variety of mango that they are using are called champagne mangoes I believe they tend to be smaller in size and sweeter. You should totally give them a try they are pretty amazing!
