About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes.     The small Thai restaurant in my town has this on the menu. It is my absolute favorite. They call it chive cakes. So happy to have the recipe, thank you!

    the thai restaurant in our town had the wrapped version growing up. We'd order them for every event bc we knew everyone would fill up on potstickers and chicken satay. The owners knew what we were up to bc we had a friendly relationship with them, so they always sent extra pans of chive dumplings. We had pans of them in the fridge for weeks, and they got so many orders, it lead to a catering contract with a guaranteed 40% gratuity. Win win.

    ​@@SSunnie_ Food poisoning can strike anywhere, even in developed countries like the US or Europe. While wealth can influence the types of restaurants you frequent, it definitely helps if you can afford that. Unless you're a 3-year-old who only drinks milk and shouldn't be eating anything more complex than that.

    ​@@SSunnie_ I've been to Thailand several times, had street food every day, and have had no food poisoning. It all depends on where you eat and what you eat, and how sensitive your stomach is.

    Oh My God, we have similar like that, here in Indonesia, we call it CIRENG. The difference is we're not steam it first, we fried it soon after you mixed all the ingredients. O yeah, we pour hot water on tapioka instead of cooked it. And i loveee the texture, crunchy on the outside and chewy in the inside, And the sauce made from brown sugar, tamarind, chili and a bit of salt , grind them all together. I promise you this is sooo gooddd.

    This is not exactly traditional Thai dish, this is actually teochew dish. Where the teochew bring it to the Thailand. So if she is homesick, better back to tomyum or green curry although this still taste very good X)

She speaks fluent Teochew and eats certain foods because a Teochew family held her captive as a slave. Happy? Also? Green curry and Tom yum? Idk if you’ve ever been around a Thai woman but I can assure you she is very rarely craving the cultural equivalent of spaghetti bolognese

    There's a popular Indian snack called 'Kothimbir vadi' which is a lot like this. We use coriander and chick pea flour instead of chives and rice flour. But same process and looks the same ❤

    Khichu gujarati recipe uses same rice flour, but people don't fry it and eat it with chili oil This is fusion of khichu and kothambir wadi😅

    It's nowhere near the same though. This is super chewy like sticky rice. It has a texture similar to mochi. And funny enough alot of Thais don't like Indian food because they say its too many spices yet they use 1001 spices too

    Fun fact, this originates from the Chinese in Thailand that are originally from the Chaoshan/TeoSwa/Teochew/Chaozhou area of Guangdong. We call them 韭菜粿 or “gu cai guê”.

    In Vietnam, there is a Chinese-owned restaurant that i usually go to and they serve this “cake” by frying them with egg! Very delicious, one of my comfort dishes

    I think it's all over South East Asia tho. There's a lot of Indonesian with Chinese ancestry too, so we have a lot of Chinese food like dumplings siomay and kwetiaw. And a lot of borrowed words, like garlic chives are called "kucai" in Indonesia

    Omg I've only ever had the "classic" version growing up and I always liked them pan-fried longer so the outside dough would be more crispy... This looks amazing and way more my style since it's extra crispy!

    We have a Chinese dish really similar to this! It’s called 薄撐 (roughly translates into “thin cakes”). The dough is basically the same with a lot of chives but instead of steaming we go straight to pan frying them like pancakes. My grandma used to put shrimps in the dough too! I love them sm.

    This is actually a Chinese dish brought to Thailand by Teochew (潮汕) migrants who account for most of the Thai Chinese population. In Teochew dialect we call it gu chai kue 韭菜粿

    I LOVE กุยช่ายทอด!! When i was still a kid in Thailand, there was a street food market fair going on every weekends. There’s a small business selling this deep fried chive cake served with spicy-ish sweet black soy sauce. It was so good. 😚 I’m thinking about making this but with air fryer. Have to think about coating the cooked chive cake with oil first before throwing into airfryer. แต่ทอดด้วยน้ำมันคือสุด 👌

    Indonesia had similar dish, its called 'pempek sutra' but we add egg white to the dough, so its more fluffy, and we dip it in 'cuko' a sweet, spicy, and sour tamarind sauce

    ​@@pustakarileks7404Just because it's not special for you, doesn't mean it can't still be a revelation to someone else. Cireng is neither steamed, nor made with eggs though. It's rice flour dough with spices and seasonings straight into hot oil.

    The wrapped version looks like one of my favorite dim sum dishes. I made your variation today and I might like it better than the wrapped one! You weren’t kidding in your recipe-the chives practically melt in your mouth. And because you’re pan frying the chives too, there’s a delicious garlicky char.

    This recipe is very delicious and healthy, especially it's easy to make. Good for homemade recipes, because it doesn't require special kitchen tools. ❤ You don't really need to steam it if you want to deep fried it. Steaming it before cooking is a good way to make sure the food is cooked well. You can also eat it directly after steaming, it is soft for elder people who can't eat fried/hard food.

    In my country Malaysia we call this kind of dough, albeit straight up deep fried and not steamed first, "cucur". Ingredients vary from onions, sweet corns, anchovies, fresh prawns, chili peppers, potatoes, spring onions, beansprouts, or a mix of these (usually never using ground beef or chicken, but that's probably just in my household? Idk). The simplest being "cucur bawang" aka filled with only chopped onion. And we drop-fry them one by one in quick succession either using our fisted palm or the ladle (of varying sizes). If you fry in bigger sizes, after you get them out you can chop them into smaller pieces. Enjoy with homemade chili sauce (my family loves eating cucur with Thai chili sauce, or its variant which we made ourselves)!

    I stil❤z old versions of steam dough dumplings cos its less heaty for z body (healthy & yummilicious) & of cos younger generations wud ❤z fried crispy versions

    I know in Cantonese dim sum, we have the classical chive dumplings that are steamed and then pan fried. Sometimes it might have some shrimp or bits of ground pork

    oh oh oh my wife once made some dough with pandan leaves extract (made from the leaves fresh) in it nobody in germany knew what it was but everyone loved it :D

    As a Cambodian, we also have this dish called Num Ku Chay it's quite different from the Thai version and the dish used to be my favorite.

    Omg! My burmese mom makes these but she adds more water, pouring them in ziplog bags in serving sizes and putting then in a metal version of the things you used. We don't fry it but we pour chili oil and eating them along side with some parsley! It's so good!! Edit: My mom is burmese and is shan. I think Shan has a lot of shared cultures with Thailand, her language even sounds like thai a little bit! XD

    I love Thai food. I’m Vietnamese and so in our cuisines we use a lot of similar ingredients due to geographic proximity on the map. This video reminded me that my mom would make a lot of Vietnamese foods at home that for some reason they don’t really serve in a lot of typical Vietnamese restaurants. But we have so much more to offer, so if you have any Vietnamese friends inviting you to their house for an authentic meal - accept! 😂😊 Honestly I would love to try some more Thai dishes that are not as common in the typical Thai restaurants too.

    This looks very similar to the Portuguese dish, Milho Frito but ours is made with cornmeal and collard greens. It’s very crispy and delicious but most importantly, taste like home. It’s only made by my grandma

    We in India also have "kochai leaves" or "arbi leaves" that is also made like this, you just mix the chopped leaves with flavoured chickpea flour and steamed and then fry it. It tastes delicious
