Which is the music?

Which variety of orange is this?(since this has a firm skin which can be grated.) Many oranges in India have loose skin that is not possible to grate

Hello! Tried thia with Compound dark chocolate, and store bought orange juice. Followed the recipe, but The mixture did not set in the fridge even after 3 hours. It didnt set even in the freezer.
