I fry bacon. Remove bacon from pan to cool. Sauté garlic and shallots in the bacon fat. Add spinach. Red pepper flakes. Salt pepper. A dash of vinegar. Cook it down to wilt consistency. Serve with crumbled bacon on top.

This is one of my daily vegetable. As my mom always told me to eat your vegetables.

Wilted salad - put a bunch of spinach in a bowl, 1 boiled egg roughly chopped, 4 strips crispy bacon finely chopped. When bacon is done frying add whatever you want, salt, pepper, pepper flakes, a healthy splash of acid (vinegar, wine, citrus) emulsify into a dressing and kill heat. Dump sauce on spinach or spinach into sauce pan, depending on how wilted you want it. Toss vigorously and let sit for a couple minutes, plate, and sprkinkle with eggs and bacon. Some people like various nuts, walnuts or pecans
