剁好的雞肉為何要用麵粉鹽巴抓洗成這樣!??雞肉的養份甜度都被您洗掉了 怎麼會好吃?? (好吃才怪)?都是調味料的 餵道了? 完全沒營養了? 雞肉 猪肉表皮洗乾淨切塊就可以下鍋了! 要炒要燉都一樣才會鮮甜好吃。

的確會有營養流失,不過這些流失的養分都只是雞肉表面的養分,雞肉內部的營養還是在的,所以總體來說浸泡雞肉流失的養分其實只佔整塊雞肉的一點點點點而已~ 補充:如果浸泡的雞肉切的越小塊,則流失的養分會比切比較大塊的雞肉還要多,根據表面積原則 以上是我的理解~

其實還是有差別 1.麵粉相比清水可以提供更大的摩擦力,在搓洗中能更有效的把雞肉表面的雜質刷掉。 2.麵粉的主要成分為澱粉,澱粉同時具有親水及親油特性,因此可以吸附雞肉表面一些偏脂溶性的物質。 依照我微博的理解~

瞎扯雞肉有什麼雜質! 抓爛又泡水,當然嫩啊!整隻雞都能吃,有什麼雜質?? 麵粉製作過程還比雞肉髒呢!保留雞的營養價值,才是料理的重點,清水鳳梨苦瓜加上雞肉直接悶鍋,完全不需要這麼多化學物質

雞肉一直泡水,甜味沒了,營養也流失了,調味調都是鹹的,太不健康----, 現在也不流行油滾爆香煙裊裊,----
這樣做是否浸泡過度失去鮮味,相對囗感沒那麼美味可口。如果大家不信不妨試試。也許我的說法不對,一方水土養一方人各有不同洗法.也沒有什麼奇怪。

冰鮮雞也不用這方法洗,又鹽又粉,洗完又浸水,撈起什麼味道都無了。我用鹽擦雞全身和腔內,沖洗幹淨,滴干水後,想怎樣煮就怎樣煮。
